Instructions
  1. Add the peppermint tea bags to the almond milk and water and heat in the microwave for 3 minutes.
  2. Blend all the ingredients, including the hot liquid, until smooth. Taste and add more peppermint extract, sweetener, and/or salt if needed. Enjoy!
Notes
*Use carton (not canned) coconut milk for a nut free version. (Most people with nut allergies can have coconut products, but check with your doctor first.)
Be careful when blending hot liquids as they may cause pressure to build up in your blender. Vent the blender as needed. An immersion blender can be a good option as well.
