As a continuation of my THM Success Series (the rest of which you can see on this page), I’m posting another sample menu, this time a sample menu for those cooking for two in the spirit of Valentine’s Day coming up. As always, I’m no nutritionist; this is just a sample of what a week of THM eating could look like to give you some ideas. I tried to switch up fuel types often and keep evening snacks on the lighter side. Breakfasts, snacks, and lunches are written for one person (although they could easily be multiplied), and dinners are for two. This isn’t a hard-and-fast menu; feel free to take it and make it your own!
Monday
- (B)(E) Blueberry Baked Oatmeal
- (L)(S) Peanut Butter Milkshake
- (S)(E) sliced apple with 3 Ingredient Apple Dip
- (D)(S) Lasagna in a Bowl (double batch), salad with Italian dressing/olives/feta cheese, Mock Pay Day Fat Bombs
- (S)(FP) Raspberry Italian Cream Soda
Tuesday
- (B)(E) My Fave Overnight Oatmeal
- (L)(FP) 5 Ingredient Buffalo Chicken Salad on a Joseph’s pita, cottage cheese with cocoa powder and THM Super Sweet Blend
- (S)(S) Chocolate Covered PB&J Protein Mess
- (D)(E) Grilled Chicken (Basic Marinade), baked sweet potatoes, roasted broccoli (sprayed lightly with coconut oil spray, sprinkled with garlic salt, roasted at 400 degrees until tender)
- (S)(S) White Hot Chocolate with a scoop of collagen
Wednesday
- (B)(E) Blueberry Baked Oatmeal
- (L)(S) Easy Zucchini Noodles with leftover grilled chicken, Mock Pay Day Fat Bombs
- (S)(FP) Mock Frosted Lemonade
- (D)(E) My Take on Thai Soup (double batch), half batch of Budget Friendly Cornbread
- (S)(FP) low fat cottage cheese with cocoa powder and THM Super Sweet Blend
Thursday
- (B)(S) Mock Chocolate Xtreme DQ Blizzard with Briana’s Ultimate Brownie chunks
- (L) (E) 5 Ingredient Buffalo Chicken Salad on 3-4 Lite Rye Wasa Crackers, Strawberry Pineapple Salad, dill pickles
- (S)(E) leftover Budget Friendly Cornbread (toasted with a teaspoon of butter), low fat Greek yogurt
- (D)(S) Parmesan Chicken Tenders (half batch), cabbage sauteed in butter with garlic salt, Cheesecakes for Two
- (S)(FP) Raspberry Italian Cream Soda
Friday
- (B)(E) Creamy Maple and “Brown Sugar” Oatmeal
- (L)(S) Very Berry Salad with leftover grilled chicken, Briana’s Ultimate Brownie
- (S)(E) leftover Budget Friendly Cornbread (toasted with a teaspoon of butter), low fat Greek yogurt
- (D)(S) Mommy’s Meatloaf (half batch), green beans, salad, Briana’s Ultimate Brownie
- (S)(FP) low fat cottage cheese with cocoa powder and THM Super Sweet Blend
Saturday
- (B)(S) scrambled eggs with veggies, fried in coconut oil

Sunday
- (B)(S) Real Peanut Butter Milkshake made with leftover Peanut Butter Ice Cream (add ½-1 scoop protein powder)
- (L-main meal)(S) Chipolte Cheddar and Chicken Broccoli Crown, salad, Mocha Almond Skillet Brownie
- (S)(E) sliced apple with 3 Ingredient Apple Dip
- (D)(FP) PB&J Milkshake
- (S)(S) Iced Vanilla Chai with a scoop of collagen
