As I recently wrote in a blog post called “What to Do When the Scale Stops Moving“, I’ve been more mindful of my calorie intake lately. In practical Trim Healthy Mama terms, this means that I’ve been trying to include more Fuel Pull recipes into my repertoire. Some of you may be looking at me skeptically and saying, “Nope! I don’t want to feel deprived!” Think again. There ain’t nothin’ wrong with Fuel Pulls when they taste like this Strawberry Shortcake Waffle. Trust me on this one. You will not regret it.
Slightly crispy on the outside but soft on the inside, this Fuel Pull waffle has the perfect waffle texture. As far as flavor, it reminds me of a Nilla wafer thanks to a hearty dash of vanilla extract. The texture helps with that image, too. To keep the waffle in Fuel Pull mode (with no significant sources of carbs or fats), I top it with low-fat cottage cheese for a good dose of protein and creaminess as well as some sliced strawberries. A small squirt of fat-free Reddi-wip is OK too.
If you want a THM:S meal, feel free to add a dollop of homemade whipped cream sweetened with a low-glycemic sweetener such as THM Pure Stevia Extract Powder.
This waffle was so good that I tried it out on a friend who was visiting for the weekend. There were no leftovers. I’m planning to make a multiple-serve version of this recipe eventually. It’s that good! As much confidence as I have in my own culinary abilities (*snort*), I was surprised at the texture of these waffles. I really do love waffles, and if I ever have leftovers, I freeze them then pop them into the toaster on the “Frozen” setting when I want to heat them up. Reheating in the toaster makes them even crispier.

- ½ tsp. baking powder
- ⅛ tsp. xanthan gum
- 1/16 tsp. salt
- 1/16 tsp. (2 doonks) THM Pure Stevia Extract Powder

- 3 T. egg whites
- 2 T. low-fat Greek yogurt
- 2 T. water
- Hearty dash vanilla extract
- Sliced strawberries
- Low-fat cottage cheese
- Squirt of Reddi-wip
- Homemade sweetened whipped cream (This makes the waffle a THM:S.)
- Whisk the dry ingredients. Add the wet ingredients and mix again. Bake in a greased waffle iron until slightly crispy on the outside. Top with your choice of toppings and enjoy!
My baking mix is a Fuel Pull in controlled amounts such as I used in this recipe. However, if you want to stay in Fuel Pull mode, keep any additional fats to a minimum.

I don’t usually calculate nutrition info on my recipes since the healthy eating lifestyle I follow doesn’t require it (Trim Healthy Mama), but MyFitnessPal is a super easy way to find nutrition facts! If you sign up for an account, under the Recipes tab there’s a place where you can just add the link to a recipe and it will pull up the ingredients for you to confirm, then generate the nutritional info! 🙂

Freaking yum! Finally, something low carb AND low fat! I used my own homemade THM blend, and added liquid vanilla sucralose as well… also used blended up cottage cheese instead of yogurt – this turned out super duper delicious! What are the macros?

I’m glad you liked it! I don’t usually calculate nutritional information because THM doesn’t require it and I embrace that freedom, but you’re welcome to put the link into MyFitnessPal to find out. 🙂 You may want to take into account the changes you made for a more exact calculation, though.

For some reason these didn’t turn out for me. I oiled up my waffle iron and they still stuck terribly. I ended up just using the batter to make pancakes but those stuck, too.

What kind of oil are you using? I use an olive oil spray which works great, but I’ve heard that coconut oil doesn’t work quite as well. I’m sorry they didn’t turn out for you! That’s frustrating!

It improves the texture of things made with non-glutinous flours. Smooths it out a bit and adds structure.

I didn’t want to drag my waffle iron out this morning, so I fried this on my cast iron skillet like a pancake. Not the same texture, but great taste! One day when I don’t have so much going on I’ll do it as a waffle. Looking forward to a multi serving recipe.

Briana- My math is horrid & I always have problems converting from pure stevia to the Pyure that I use (it’s equivalent to Gentle Sweet). Can you tell me the proper conversion please?

According to this sweetener conversion chart (https://media.trimhealthymama.com/wp-content/uploads/sites/4/2017/05/07222306/THM.Sweetener-Conversion-Chart.pdf), you’ll probably need about 2 tablespoons, but that seems pretty high to me. I’d start with a teaspoon or two, then increase from there, but then I like my stuff not so sweet. 🙂 Just taste and adjust.

Is there something I can sub for this: 2 T. low-fat Greek yogurt. I don’t have that or cottage cheese on hand. Sour cream?

The sour cream will work to substitute for the Greek yogurt (if it’s full fat sour cream, your waffle will be in THM:S territory). However, it’s not a protein source like the cottage cheese is, so I recommend adding some extra protein of some sort with your waffle. You’ll probably want some sugar-free syrup on your waffle if you don’t have the cottage cheese for topping. 🙂

You don’t see a print button near the top of the recipe below? That’s odd. I’ve never used an iPad so I’m not sure what to tell you; it shows up on both computer and mobile for me. Maybe try a different browser?

The print button shows up but when I go to print in either safari or google there is no content to print. Find this on several of your recipes. Would enjoy easier access to your recipes since they are very good.
