Hello, hello, everyone! I have something exciting for you today! Trim Healthy Mama provided me with a bag of their new Baking Blend to give away, so you can enter at the bottom of this post.
I’ve been really impressed by this new Baking Blend. It makes nice soft, moist, fluffy baked goods that aren’t as dense as most things made with your typical low carb flours. Something about this Baking Blend, be it the ratio of flours used or the protein included in the form of collagen peptides, produces a crumb with a nice structure that lets the air get in. Since low carb flours lack gluten for structure, they often produce things that are very dense, but not this Baking Blend!
Trim Healthy Mama produces some great products. I’m also a fan of their Pure Stevia Extract Powder (better tasting than any other stevia I’ve had) and Pristine Whey Protein Powder (which I used in the new Mock “Oreo” Truffle Shake I just posted). While I haven’t tried them, I’m sure their defatted peanut flour, gluten free oat fiber, glucomannan, and konjac noodle and rice products are top quality as well.

Need recipes to use the Baking Blend in? Might I suggest some powdered sugar mini donuts (really, the recipe could be used for many different things; it’s a nice neutral base) or a 5 Ingredient White Cake?
And while I have your attention (or maybe I’ve lost it by now…), I might as well let all of you know that I’m going to be transplanting for the summer. Yup, I’m leaving sunny South Carolina to move to Holmes County, Ohio, for the summer. My grandparents operate a roadside fruit stand there in the summers; we ship SC peaches up to OH (because they can’t grow peaches, bless their hearts) by the tractor trailer load (usually at least 3 per week, plus we direct ship to other locations) and sell both wholesale and retail from our little stand on St. Rt. 39 between Berlin and Millersburg. Anyway, I’m going to be working there for a good portion of the summer, and I’ve been working like mad creating recipes and documenting them so I don’t have to take a blogging break while I’m gone. It’s been exhausting work, but I now have over 30 recipes to share with you over the summer (and I don’t leave for another month, so I’ll probably have over 40 by the time I actually leave). I’m kinda ready to go to OH and quit experimenting for awhile, but I know I’ll miss it while I’m gone. I’m sure my Grandma wouldn’t mind some help cooking now and then, though. Hopefully I can manage to stay mostly on plan while working; I think it shouldn’t be too much of an issue because my grandma is big on healthy food and always has plenty of veggies with every meal.
