Hey, folks! It feels like there are a lot of pictures in today’s post! Now that I have a smartphone, I’ve been doing a better job of remembering to take pictures of my food. It’s much handier to take phone pictures than lugging my DSLR to the dinner table. Of course the picture quality isn’t as good, but that’s a trade-off I’m willing to make for the sake of convenience for these posts. You’ll notice that there are quite a few breakfasts missing. That’s because I was testing some recipes, forgot to take pictures with my phone, and haven’t edited the “fancy camera pictures” yet. You’ll get to see ’em soon enough on the blog. 😉
I’ve been doing quite a bit of recipe testing this past week so I have plenty of recipes to schedule ahead for while I’m in Africa (Feb. 9-28, so don’t be surprised if I don’t reply to emails or approve comments during that time). I think you’re going to enjoy some of this past week’s experiments! Unfortunately, with experiments come flops, and this week was no exception. I wanted to create a Deep S cake. “Why not make it dairy free?” I thought. Great idea! “Why not add okra for added healthy benefits?” I thought. That idea should never have left the drawing board….
Actually, it was a great idea but failed in execution. The cake tasted very earthy. To add insult to injury, the experimental dairy-free Deep S frosting was about the texture of rubber. Doctored up with some peanut butter and whipped cream, the concoction was edible – but not one of my best. What really hit hard was the fact that the cake was absolutely picture perfect. Who can resist a gorgeous chocolate cake? After taking one bite, my mom stated, “That was a disappointment.” Hahaha….
If you’re new here, these “What’s on My Plate?” posts are meant to give you inspiration and show you just how easy healthy eating can be! They are not professionally-styled photo shoots, nor do they necessarily catalogue everything I ate in a week’s time. These posts aren’t meant to be guides for serving size or anything like that. I don’t always have everything on my plate at the beginning of the meal when I get my phone out to take a picture (and sometimes I forget to take a picture, period). Please just use these posts as inspiration for what to eat, not how much to eat.

Breakfast:
(E) Chocolate Oatmeal (with not as much banana as it appears…the bowl is deceptively small)
This is my classic chocolate oatmeal breakfast, and I thought I should actually measure for once so I can share it with you. Recipe coming soon.
(E) This is some of my failed E granola that I was working on last week. There’s some cottage cheese under there too. Topped with blueberry sauce experiments.
(E) More chocolate oatmeal with more blueberry sauce
Lunch:
(E) Mom’s Chicken Soup – paired with the salad below (lettuce and chopped apple with some red wine vinegar and a little soup broth for dressing)
(S) Cold cuts sandwich on half a Joseph’s pita. The large volume comes from a handful of spinach that is hiding behind the lunch meat.
(S) Leftover Philly Cheesesteak Skillet (recipe coming soon!) and salad
(S) Leftover Philly Cheesesteak Skillet and salad (again)
(S) Leftover Philly Cheesesteak Skillet (for the third time), sautéed cabbage, and cheese
(S) Leftover Mommy’s Meatloaf (NF, pg. 42), salad, and green peas
Supper:
(S) Philly Cheesesteak Skillet, green beans, Special Roasted Brussels Sprouts (the Philly Cheesesteak Skillet and Brussels sprouts recipes will be coming soon)
(S) Mommy’s Meatloaf (NF, pg. 42), green beans, mashed caulitoes (NF, pg. 121)
(XO) Burritos in low-carb wraps – sour cream, cheese, salsa, and a mixture of ground beef and refried beans

(S) Grilled chicken, spaghetti squash with butter, green beans
(S) Chicken quesadillas (NF, pg. 110), salad with salsa and Ranch

This could’ve been a lovely E, but my mom used a fatty marinade. Even though there are a few FP marinade recipes in my cookbook. Oh well, I didn’t have to cook, so I’m not complaining.
Snacks/Desserts:
(Deep S) The illustrious cake. I will hopefully be tweaking it when I get back from Africa.
(S) Fried Cream Cheese and Berry Taco (NF, pg. 385), minus the berries
(E) Key Lime Pie yogurt with fruit
(E) Apple and some venison jerky for protein
(S) Instant PB&C-Covered Strawberries (NF, pg. 296) (peanut butter on top instead of mixed in)

Is this the Tasty Cake? If so help me with mine. Why is it dry and I think it needs to be a bit sweeter.

Hi Donna! I’m afraid I’m not sure what you mean. Are you referring to the flopped okra cake recipe I talked about in the post? If so, that’s a recipe of my own that I was working on, and I haven’t posted it on my blog because it didn’t work out. 😛 I’m not sure what “Tasty Cake” you’re referring to. If it’s dry, try adding less flour or more liquids next time, and if it’s not sweet enough, just add more sweetener until it meets your taste buds’ approval. 🙂 A granulated sweetener usually works better than plain stevia in chocolate cakes. I don’t know if your Tasty Cake is chocolate or not.
