Hey folks! It’s a quick post today since I’m flying to Africa tomorrow. I decided to just photograph my lunches this past week to cut down on the time needed to put this post together since I’ve been busy packing and writing other posts to schedule while I’m gone.
As you can see, I barely got any E lunches in this week, but don’t worry – I got my E meals in at other times of the day. 🙂
If you’re new here, these “What’s on My Plate?” posts are meant to give you inspiration and show you just how easy healthy eating can be! They are not professionally-styled photo shoots, nor do they necessarily catalogue everything I ate in a week’s time. These posts aren’t meant to be guides for serving size or anything like that. I don’t always have everything on my plate at the beginning of the meal when I get my phone out to take a picture (and sometimes I forget to take a picture, period). Please just use these posts as inspiration for what to eat, not how much to eat.

The lunch above could’ve been a great THM:E, but my mom used a fatty marinade on the chicken. Using a Fuel Pull marinade (such as this one from my website or any of the Low Carb/Low Fat options in my cookbook), this meal would’ve been an E, but as it is, it was probably a crossover.
Grilled chicken + sweet potato + steamed broccoli + colorful peppers
(S) cold sandwich (mayo, cheese, lunch meat, lettuce) in half a Joseph’s pita + celery and peanut butter (below)
(S) leftover Mommy’s Meatloaf (NF, pg. 42) and sautéed cabbage, veggies and Ranch + Trail Mix Granola Bar (below)
(S) Trail Mix Granola Bars (Necessary Food, pg. 393)
My mom left out the cranberries because we didn’t have any on hand and melted 85% dark chocolate to drizzle on top.
(S) sandwich in half a Joseph’s pita with leftover sausage links, cheese, mayo, lettuce, and ketchup + half a leftover chocolate waffle from blogging experiments (below – recipe coming next week!)
