Single-Serve Peach Cobbler
THM:E, low fat, no sugar added, gluten/nut free
Serves: 1
  • 1 medium-large peach, chopped (thawed and drained if frozen)
  • 1 tsp. THM Super Sweet Blend (or more, to taste)
  • Dash vanilla extract
  • Dash cinnamon
Biscuit Topping:
  1. Stir the first section of ingredients together and pour into a ceramic or glass ramekin.
  2. Whisk the biscuit topping ingredients together and pour over the top of the peaches.
  3. Microwave for 2 minutes. The topping will look done after about a minute, but you need to nuke it a little longer than you think. Let the cobbler cool for a few minutes before digging in for best texture. You can use this as a dessert after an THM:E or FP meal (between the peach and the oat flour, this recipe contains roughly 30g net carbs), or add some protein (like low-fat cottage cheese) on the side and call it breakfast.
  4. I haven't tried baking this recipe, but that would probably work. Bake at 350* until a toothpick inserted through the topping comes out cleanly.
*I used full-fat sour cream as my allotted fat in this recipe because I like the texture it gives the topping (you are allowed up to 5g fat in a THM:E meal). If you don't have sour cream or want to use your 5 grams of fat elsewhere, use low-fat sour cream or Greek yogurt in its place. For a dairy-free option, I would try substituting the sour cream with unsweetened applesauce, but the result will be gooier.
We make our own oat flour by grinding old-fashioned or quick oats to a flour in a blender or coffee grinder.
Feel free to top with some unsweetened almond milk, fat-free Reddi-wip, and/or low-fat ice cream (such as this single-serve recipe or this full-size recipe).
