Single-Serve Peach Frozen Yogurt
THM:E, low fat, no sugar added, gluten/egg free | Use carton coconut milk for a nut-free version. Most people with nut allergies can handle coconut products, but check with your doctor first to make sure.
Serves: 1
  • 1 medium-large peach, frozen in slices
  • ⅔ c. low-fat Greek yogurt
  • ⅓ c. unsweetened almond milk
  • 1-2 doonks THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.)
  • Dash vanilla extract
  1. Blend the ingredients together until smooth. I use this Vitamix with a tamper to get the thick mixture to blend; if you don't have a tamper you may need to stop the blender a few times and scrape down the sides with a spatula to encourage the mixture to incorporate.
  2. Freeze the mixture in a bowl in the freezer for an hour or until the desired consistency is reached, stirring often for best results. Enjoy!
Feel free to multiply the batch by 3 or 4 times and freeze it in an automatic 1½-qt. ice cream churn for the whole family! Someday I'll make a recipe like that.
