Joyous Almond Bites
 
 
THM:S, low carb, sugar free, gluten/egg/dairy free || For a nut-free version, leave the almonds off. Most people with tree nut allergies can handle coconut, but confirm with your doctor first. || Use an allergy-friendly chocolate like Pascha brand if necessary.

Instructions
  1. Whisk the dry ingredients.
  2. Add the wet ingredients and mix well with a hand mixer.
  3. Use your hand to press the dough together into a big blob, then scoop it with a 1-tablespoon cookie scoop. Use your fingers to squish the blobs together into little mounds, then press an almond into the center of each. Store in an airtight container.
Notes
Not all oat fiber is created equally! I use LifeSource brand from Netrition. It has a light color and mild taste. I don't recommend replacing the oat fiber with another flour because you'll lose the light texture. Some people substitute psyllium husks for oat fiber, but I haven't personally tried that.
