Peanut Butter Cookie Nog
THM Fuel Pull, low carb, low fat, sugar free, gluten/egg/dairy free
Serves: 1
  1. Heat the almond milk and water together to reach your desired temperature. (I do this in the microwave in a huge mug.)
  2. Add the rest of the ingredients and blend with an immersion blender until smooth. (You can use a regular blender, but be very careful when blending hot liquids and vent the blender as necessary to avoid pressure buildups.)
  3. Taste and add more sweetener and/or salt if necessary to balance the flavors. Blend again. Enjoy!
*I don't recommend using whey protein powder in this recipe. The flavor just didn't pair well with the peanut flour when I tried it.
**I use Konjac Foods brand glucomannan (from Amazon or Netrition). Different brands can vary in strength, so if you're using a stronger brand like the Trim Healthy Mama brand and think the drink is slimy, try decreasing the amount of glucomannan. (Or just learn to embrace it and enjoy it for all its health and weight loss benefits.) This amount in the brand I use is not slimy but does make the drink fairly thick and foamy. It's so filling!
-Not all defatted peanut flour is created equal. I prefer ProteinPlus brand, which you can purchase here on Amazon or here from Netrition.
-This drink will thicken as it cools, so I don't recommend making it ahead and refrigerating it unless you want a gluccie pudding.
