Low-carb, sugar-free, THM:S, Gluten/Nut free - This makes a great breakfast, snack, or dessert. Try it plain, topped with some sugar-free maple-flavored syrup, or douse it in unsweetened almond milk or coffee.
Mix together the coffee cake ingredients and pour into a greased or foil-lined mini loaf pan. Combine the streusel ingredients and sprinkle on top. Bake at 350 degrees F for 25 minutes. Yields 1 serving.
Notes
2 tablespoons of old fashioned oats is 5.5 net carbs, well within S limits for Trim Healthy Mamas. You could use shredded unsweetened coconut flakes in place of the oats if you're concerned about the carbs from the oats, but I prefer the oat version.
