Creamy Peach Pudding
 
 
Low-fat, Sugar-free, THM:E, Gluten/Egg/Peanut free | This pudding includes protein, so you could use it as a snack on its own if you like.

Ingredients
  • ½ cup unsweetened almond milk
  • ½ tsp. unflavored gelatin (such as Knox brand - if using beef gelatin such as Great Lakes brand or THM Just Gelatin, add an extra ⅛ tsp.)
  • ½ a peach, at least semi-thawed if frozen
  • ⅓ cup low-fat cottage cheese
  • 2 doonks THM Pure Stevia Extract Powder (to taste)
Instructions
  1. Heat the almond milk until boiling. Stir in the gelatin and let set a few minutes to cool down a bit.
  2. Blend all the ingredients together until completely smooth (I use my Ninja single-serve cup). Pour into a bowl and refrigerate for several hours until thick. Enjoy!
  3. For a larger, more Jello-salad-ish version, bloom 2 tsp. Knox gelatin in 1½ cups of almond milk for 5 minutes, then heat just until boiling. Blend this hot mixture with 1 cup of sliced peaches (thawed if frozen), ½ cup low fat cottage cheese, 5 doonks THM Pure Stevia Extract Powder, and a dash of salt until completely smooth. Pour into a bowl and refrigerate for several hours until firm. Yields 4 servings.
Notes
If you use berries (I would use ⅓ - ½ cup), this would actually be a Fuel Pull for Trim Healthy Mamas (low-carb and low-fat).
Feel free to stir in chunks of fruit after blending, if you wish.
If you want a thicker "Jello" consistency, add more gelatin.
