5-Ingredient Single-Serve Chocolate Cake
THM:S, Low-carb, Sugar free, Gluten/Nut free | I took the water as a freebie ingredient...is that allright? Haha...
Serves: 1 serving
  • 1 egg
  • 1 T water
  • 1 T sour cream
  • 2 level T cocoa powder
  • Sweetener of choice, to taste (see the Notes section below for what I used)
  • ½ tsp. baking powder
  • Toppings of choice, optional (see Notes section)
  1. Combine all ingredients until totally smooth and microwave in a small glass bowl for 1 minute or until mostly done through but still a little wet on top in the middle. I used a 2 cup glass Pyrex dish which worked wonderfully.
I used 3 doonks of THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.) and 2 packets of Truvia (1½ tsp. spoonable Truvia) to sweeten this recipe. It was perfect for me but might be a little dark to some. I do not recommend using *only* pure stevia extract powder to sweeten chocolate recipes; any granulated sweetener would work great, or use a combination of the two.
Since this chocolate cake is pretty light in the fat department, I like to add a little on top! My favorite topping is some natural peanut butter (not nut free, obviously), a small squirt of FF Reddi-Whip, and some unsweetened almond milk (also not nut free).
