Apple Cinnamon Waffle
THM:E, low fat, sugar free, gluten/nut free with dairy free suggestion in Notes section
Serves: 1
  • ⅓ c. oat flour*
  • ½ tsp. baking powder
  • ½ tsp. cinnamon
  • 3 doonks THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.)
  • Dash salt

  • ¼ c. egg whites
  • 2 T Greek yogurt**
  • 2 T. water
  • ½ c. chopped apple
  1. Whisk the dry ingredients.
  2. Add the egg whites, Greek yogurt, and water and mix until smooth. Fold in the chopped apple.
  3. Bake the batter in a greased waffle iron. When the waffle is done, top with low-fat cottage cheese and some sugar-free syrup and enjoy!
*This is just oats ground up in a high-powered blender or coffee grinder. Use gluten free oats if necessary.
**Try substituting unsweetened applesauce for the yogurt if you're allergic to dairy. Do not top the waffle with cottage cheese, obviously.
