These, my friends, are oatmeal cookies. Very simple, cheap oatmeal cookies. And they’re the solution to the dessert craving you get after eating an E meal when you know you can’t have cheesecake or chocolate.

Oatmeal Craisin Cookies
THM:E, Low-fat, Sugar free, Gluten and peanut free
Ingredients
- 2 cups old-fashioned oats (use gluten free if necessary)
- ¼ cup oat fiber (use gluten free if necessary)
- 4-5 tsp. cinnamon, to taste
- 2 tsp. baking powder
- 2 tsp. THM Super Sweet Blend (or more to taste)
- ½ tsp. salt
- ¼ tsp. xanthan gum
- 1 cup unsweetened almond milk
- ⅓ cup egg whites
- 3 T low fat Greek yogurt
- 2 T unsweetened applesauce
- 1 tsp. Watkin's maple extract
- ½-3/4 cup fresh chopped cranberries or unsweetened dried cranberries
Instructions
- Whisk the dry ingredients together. Add the wet ingredients and mix again. Add the cranberries and mix until they are well-distributed. Using a 2 T cookie scoop (or ⅛ cup measuring cup), scoop cookies out onto a greased cookie sheet. Bake at 350 degrees F for 15 minutes. Store cookies in the fridge. Yields 20 cookies.

What would you recommend in place of the low-fat Greek yogurt? We are a dairy-free house. These sound amazing and I NEED to make a batch or three and freeze them for “emergencies” lol

Most cookies freeze just fine, so I’m sure that would work!

Would frozen craberries be too runny for this recipe?

I would thaw them before using them in this recipe. It works just fine; I’ve done that before. 🙂

It’s hard to find unsweetened dried cranberries. Where do you get yours Briana? Also, would this recipe be good without the cranberries as a plain version of oatmeal cookies?

Haha…I actually usually use regular sweetened ones but soak a couple of times in hot water to get rid of the sugar as best I can. Or I use fresh cranberries. Unsweetened dried cranberries are the ideal, but I usually improvise for budget reasons. I’ve never made the cookies without cranberries of some kind and I think you’d be missing a lot without that bright flavor.

Could one soak raisins to use, and still be on plan?

Grapes are much higher in natural sugars than cranberries are, so when dried they become very concentrated forms of natural sugar and aren’t really recommended on plan. However, a few here and there probably won’t hurt too much. 🙂 Pearl says she allows herself 10-12 raisins in her oatmeal sometimes.

Love this recipe so much that I made a triple batch! I was doing an experiment to use up some leftover cookies so I broke them into pieces onto a cookie sheet and broiled them for about 10 minutes, added it to the bowl, drowned it in almond milk, and it made amazing cereal! I even added extra cinnamon on top to add extra flavor! Thanks for the inspiration.

Oh Ms Briana these are so delicious. I added some butter extract and extra applesauce, since it was a thinner batter I baked in 11 muffin cups and these are fabulous. Thanks for all of the hard work that you do to make these wonderful recipes for us 🙂

Since the majority of my followers follow the Trim Healthy Mama eating plan, I’d like to point out for clarification’s sake that dried prunes aren’t on plan due to the amount of concentrated sugars they have. Sounds good, though-enjoy!

Thanks for this recipe! Tried it last night and I did use oat flour instead of oat fiber and it seemed fine to me and my hubby 🙂 Although, next time I think I will add a little more cinnamon and sweetener!
