If you read my recent post about the Trim Healthy Mama strategies that are working for me, you know that I’m trying to amp up my glucomannan intake because it helps stabilize the blood sugar, slows down fat absorption, and fills me up quickly without excess calories! I published a Cranberry Nog recipe that was heavy on the gluccie in December and was surprised at how many of you enjoyed it so much! This Peanut Butter Cookie Nog is a similar recipe but in a very different flavor. Defatted peanut flour, plenty of sweetener and salt (since glucomannan tends to mask flavor), and a little baking powder make this hearty drink taste like cookie dough!
Not all peanut flour brands are created equally! I prefer Protein Plus brand, which you can purchase HERE from Amazon or HERE from Netrition. Some other brands that I’ve tried have been bitter, but Protein Plus brand tastes very mellow when you add some sweetener and salt to round out the flavor. Just a heads-up: whey protein powder didn’t play nicely with the peanut flour when I tried it in this drink. Collagen does a much better job of making this Peanut Butter Cookie Nog creamy and full of protein without bitterness or weird flavors.

- 1 c. unsweetened almond milk
- 1 c. water
- -
- 3 T. defatted peanut flour
- 2 T. collagen*
- 2 tsp. THM Super Sweet Blend (or more, to taste)
- ½ tsp. vanilla extract
- ⅛ tsp. baking powder
- ⅛ tsp. salt (scant)
- 1/16 tsp. (2 doonks) THM Pure Stevia Extract Powder
- ½ tsp. glucomannan**
- Heat the almond milk and water together to reach your desired temperature. (I do this in the microwave in a huge mug.)
- Add the rest of the ingredients and blend with an immersion blender until smooth. (You can use a regular blender, but be very careful when blending hot liquids and vent the blender as necessary to avoid pressure buildups.)
- Taste and add more sweetener and/or salt if necessary to balance the flavors. Blend again. Enjoy!
**I use Konjac Foods brand glucomannan (from Amazon or Netrition). Different brands can vary in strength, so if you're using a stronger brand like the Trim Healthy Mama brand and think the drink is slimy, try decreasing the amount of glucomannan. (Or just learn to embrace it and enjoy it for all its health and weight loss benefits.) This amount in the brand I use is not slimy but does make the drink fairly thick and foamy. It's so filling!
-Not all defatted peanut flour is created equal. I prefer ProteinPlus brand, which you can purchase here on Amazon or here from Netrition.
-This drink will thicken as it cools, so I don't recommend making it ahead and refrigerating it unless you want a gluccie pudding.

You inspired me to try and incorporate more okra into my day and adding 1/2c frozen okra to this recipe was perfect! I kept the liquids cold, put everything into a small blender and it was a delicious sweet treat (no okra taste at all!)

Hi Cindy! Yes, unfortunately Konjac Foods recently discontinued their glucomannan and I’m so disappointed! I’ve used their product for years and loved it. I’ve actually never tried another brand so I don’t have any recommendations yet. I’m still finishing my Konjac Foods brand glucomannan, but when I’m done with it I’ll probably try NOW brand as I’ve had good success with their products. I know different brands can vary in strength. The THM brand has a reputation for being stronger than others, which is good in that you don’t need to use as much but I’m afraid it would also have a tendency to be more slimy because it’s stronger.

No, I wouldn’t do that because the glucomannan continues to thicken if you cool it (or heat it again) and the texture would probably not be great.

This is incredible!!! I didn’t have any vanilla extract so I used butter extract and I used two Tbs of Erythritol in place of the recommended sweetener. Thank you so much for this recipe!!! I have THM Glucomannan and I don’t think it’s too slimy at all. This is going to be the best in the winter!!!

Okay—HOW do you get the gluccie to blend in and actually STAY blended? I’ve been trying to make this (as a hot chocolate version, not this one yet, but you’ll see why) several times, but the gluccie always rises to the top in a sludgey, slimey layer. I can’t figure out what’s up! I really wanted to try this recipe. :/ Any troubleshooting tips?

What brand of gluccie are you using? I’ve never had that problem with gluccie recipes (I use Konjac Foods brand). I used an immersion blender for this…are you using an immersion blender or regular blender? (I don’t see why that would make a difference, but just trying to see the variables.) I’m sorry you’re having trouble! I have no idea what’s going on!

Very good! A nice switch up from coffee in the morning. Doesn’t taste low fat. I don’t have a huge mug so I used a mason jar. Be sure to use wide mouth so your immersion blender will fit.

Can I use less collagen? It doesn’t agree with me. After I use it I feel like I have the flu. I’ve tried to start small and increase the amount I use gradually, but can really only tolerate less than a tablespoon. Will that affect the recipe much?

Is pressed peanut flour the same as PB2?

Pressed Peanut Flour is THM’s defatted peanut flour. PB2 is defatted peanut flour as well, but it does have some sugar in it, so I recommend using another brand. Yes, PB2 is a brand of defatted peanut flour, but it contains sugar so I personally prefer the brand I linked in this post. 🙂

Hey Briana! This looks soooo god! I will be trying it as soon as I get more almond milk! I am allergic to peanuts, would the recipe still work if I use coconut flour, or almond flour? I am a THT (trim healthy teen) and your posts are really valuable to me! Keep up the good work!

Thanks, Penelope! I definitely wouldn’t try coconut flour since it’s so gritty, and I’m afraid almond flour would be too textured as well. You’re welcome to try, though! Peanut flour tends to be finer with more flavor than almond flour, in my experience.

That generally works, but I haven’t tried it in a hot drink recipe like this personally so I can’t vouch for it. It would be worth a try, though!
