Strawberry Dreamy (Soft Serve or Shake)
 
 
THM:FP, low carb, low fat, sugar free, gluten/egg free | For a nut-free option, try unsweetened carton coconut milk instead of the almond milk. Most people with nut allergies can handle coconut products, but check with your doctor first to make sure.

Ingredients
  • 1 c. frozen diced okra*
  • 1 c. frozen strawberries
  • 1 c. unsweetened almond milk
  • ¾ c. crushed ice
  • ⅓ c. low-fat cottage cheese
  • 2 T. whey protein powder**
  • 2 T. half-and-half
  • ¼ tsp. baking powder (for flavor)
  • 3/32 tsp. (3 doonks) THM Pure Stevia Extract Powder
  • Dash vanilla extract
  • ¼ tsp. glucomannan
Instructions
  1. Blend all the ingredients in a high-powered blender until a smooth soft-serve consistency is reached. If in doubt, blend a little longer; the shake will taste better. (I used a Vitamix with a tamper and found that high speeds help this blend. If you find that your blender won't blend the mixture, thin it down into a shake with some more almond milk.) Enjoy!
  2. This recipe makes a huge serving of soft-serve ice cream or a quart jar of strawberry shake. I enjoy the whole thing for lunch, but you can try cutting the recipe in half if you don't want so much.
Notes
*Do not thaw or the shake won't be as nice and thick! Use store-bought frozen okra, or if you freeze your own, blanch it before freezing to help break it down, cut some of the slime, and get rid of some of the earthy taste.
**I don't typically like the taste of whey protein powder, but in this amount in this shake I don't mind it and it helps make the shake creamy and fluffy. You can try substituting collagen, but the shake probably won't be quite as creamy.
Feel free to add some defatted peanut flour to this shake for a PB&J option! You can add natural peanut butter, but that will turn this into a THM:S recipe.
