Pumpkin Spice French Toast in a Bowl
THM:S, low carb, gluten/nut free (allergy information does not include suggested toppings. Use gluten free oat fiber if necessary.)
Serves: 1
  1. Mix together all the ingredients (except for topping ingredients) and microwave for 1½ - 2 minutes or until the top is not quite dry in the middle (adjust to your liking). Top with your choice of toppings (see suggestions above).
  2. If you don't intend to top this with additional sweetener or a sweet syrup, I recommend adding a little more sweetener to the batter itself.
  3. Alternately this could be baked in an oven-safe ramekin at 350 degrees F until the top is not quite dry in the middle.
