Description

This Valentine Punch is a healthier sugar free version of the sherbet and ginger ale punch my mom used to make for us! Raspberry “sherbet” cubes made easy with 3 ingredients, a blender, and ice cube trays are combined with your favorite sugar free soda for a quick and easy festive drink.

This punch is a THM E as written, and a Fuel Pull if the kefir is double fermented. Check out the THM Facebook group for more info on how to do this.

Ingredients

“SHERBET”

  • 2 cups (490g) plain unsweetened low fat kefir (double fermented if you want to make this a THM FP)
  • 2 cups (240g) frozen red raspberries
  • 1/2 cup (90g) THM Gentle Sweet

  • Approx 68 ounces sugar free soda or sparkling water of choice (with liquid stevia to taste if it’s unsweetened)

Instructions

Blend the sherbet ingredients together until completely smooth and pour into two 16-hole standard ice cube trays. Try to make sure the trays are somewhat evenly filled. Freeze until firm; overnight is great.

Add the frozen cubes to a punch bowl or large pitcher with the soda of your choice. I used a sugar free lime soda. Anything citrus pairs great with raspberry. Allow the sherbet cubes to melt a bit before serving the punch in fancy goblets.

Notes

You could probably turn the sherbet mixture into an actual sherbet by blending the frozen cubes (slightly softened) in a high powered blender until they reach a soft serve consistency.

This punch does look a little funny because the kefir leaves flecks in the soda, but I promise it tastes great. My kids (and husband) loved it.
