Description
I initially crafted this “eggnog detox” to be a good system clean-out after overindulging for the holidays, but now I just make it because it’s thick and filling and it tastes good. THM Deep S, low carb, sugar free
If you, like me, are not a huge fan of rum flavor, try maple flavoring instead. And if you’re not into nutmeg, cinnamon would be great!
Ingredients
- 1 cup water
- 1 cup unsweetened almond milk
- 3 tablespoons collagen
- 1 tablespoon THM Super Sweet BlendÂ
- 1 tablespoon coconut oil (refined or unrefined)
- Hearty pinch of salt
- Pinch of nutmeg
- Dash of vanilla extract
- Dash of rum flavoring (optional, I prefer maple flavoring)
- 1 egg
- 1/4 teaspoon xanthan gum
Instructions
Heat the water and almond milk in a wide mouth mason jar or large glass measuring cup in the microwave for 4 minutes or until just boiling (or in a pan on the stove until just boiling). Add the other ingredients, adding the egg and xanthan gum last. Blend immediately with an immersion blender (very carefully in pulses at a low speed to avoid splashing yourself with hot liquid).
If you have your act together and get all your ingredients prepped before the liquid boils, you can add everything and still have enough heat left to cook the egg. I temped mine with an instant read thermometer and it was over 170*F after blending, which is considered safe to consume. (Personally I grew up with raw eggs in frozen eggnog so I have no issue with it, but just to reassure you…)
Add the egg after the other ingredients so they can take the temp down a bit and not completely scramble the egg. You should end up with a velvety smooth consistency after blending!
Adjust the sweetener to your taste; feel free to add more (and/or salt to round out the flavors)! Adjust the nutmeg and flavorings to taste.
Notes
Some butter in place of all or some of the coconut oil would also be delicious; coconut oil just has better detox capabilities according to some. A dab of molasses would be great for more brown sugar flavor (not Deep S). A few tablespoons of cream instead of the coconut oil would also be good (not as detoxing; regular S for THMs).
Feel free to increase or decrease the xanthan gum for your favorite texture. 1/4 teaspoon adds a nice thickness and mouth feel without being pudding-like. (It helps fill you up if this is your snack or meal.) Add even more if you like! Glucomannan can be used in the same amount.
