Do you have a garden? If so, there is a distinct possibility that you planted cucumbers. If that is the case, there is one other distinct possibility: you now have cucumbers coming out of your ears.
This refreshing salad with its creamy sweet/sour dressing is a great way to make use of those cucumbers as a simple and quick side dish that for you Trim Healthy Mamas can be paired with any meal type.
I’ve grown up on cucumber salad, and for this recipe IÂ used our old faithful recipe by Pauline Gingerich in the blue Whispering Pines church cookbook as a guide.
Serve with a nice slice of zucchini quiche for a yummy garden supper.

- 3 cups washed and sliced cucumbers (and peeled, if desired)
- ½ tsp. salt
- Scant ½ tsp. pepper
- ½ tsp. dill weed
- 1 doonk THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.)
- 1 T apple cider vinegar
- ½ cup low fat sour cream
- Stir the salt into the cucumbers and let set for 20 minutes. Drain and add the rest of the ingredients. Stir well and serve.
I would like to try substituting lemon or lime juice for the apple cider vinegar in this recipe for a different twist. You could add onions if you like. Some garlic powder might be a nice addition as well.

Briana, I made this as written today. I did add a scant quarter teaspoon of garlic powder, too. It’s really easy and yummy! I will keep making it from time to time, but add a little more of each of the spices. Thanks!

No, that would actually be a Fuel Pull since you have all low carb/low fat ingredients. 🙂 To make it an E, you’d need to add a carb source, such as two slices of sprouted bread or a piece of fruit.
You have this in a mason jar in the pictures. Did you just use that as your choice of serving dish, or could you possibly store this in jars to use the next day or so as leftovers?
That was just my serving dish. 🙂 The salad tends to wilt and get watery if leftovers are refrigerated overnight.

So happy to see this is a fuel pull. I’ve made a similar version for years, but have never salted the cukes and let them sit before. When you say drain after 20 minutes should we then rinse them? Thanks
No, you don’t need to rinse them. Just drain the excess liquid off so it doesn’t make your salad watery. 🙂
Can you use yogurt in place of sour cream? What kind of thm meal would that make it?
I’ve never tried that, but I’m sure you can. Low fat Greek yogurt would still be fuel pull, and regular yogurt (a carb source) would be used if making this a side for a THM:E meal.

I want to make your brownies but I don’t have any oat fiber. Is that something I can leave out? Or is it a must?
Assuming you mean my Fudgy Brownie recipe, I would substitute almond flour or ground golden flax for the oat fiber. You definitely need flour of some sort to replace it.
