I’ve been itching to share this one for awhile. This is my go-to snack/dessert when I have nothing on hand, don’t want to go to much effort, and am craving something good. Like chocolate and peanut butter. It takes only 5 ingredients (all able to be found at Walmart) and will cure cravings. Trust me.
If you want to lighten this snack up a little, use defatted peanut flour in place of the peanut butter.
I suggest adding some protein if using this as a snack on its own. Grab a bite of cottage cheese on the side. Or just make my chocolate-covered PB&J protein mess.
This is a great way to get your coconut oil in…coconut oil is a great way to rev your metabolism, and it has tons of other health benefits as well!

You can find this recipe in my cookbook, Necessary Food.

- 1 T refined coconut oil (or use unrefined if you don't mind a coconut flavor)
- 1 T natural peanut butter (or you could sub defatted peanut flour to keep this less calorie-dense)
- ½ T cocoa powder
- 1 packet (3/4 tsp.) Truvia (or other low-glycemic sweetener, to taste)
- Handful of frozen strawberry slices (enough to use up your chocolate coating; you could also use frozen raspberries)
- Melt the coconut oil, peanut butter, and cocoa powder together (I used a microwave). Stir in the Truvia. Add the frozen strawberries and stir to coat. The chocolate coating will harden on the strawberries very quickly. Enjoy immediately, or let the strawberries thaw a bit before digging in.
The Truvia might not completely dissolve, so if you don't want it slightly gritty, powder it first or use a liquid or powder sweetener in its place (amounts will vary depending on strength of sweetener).
You can make a plain peanut butter version of this by omitting the cocoa powder and stirring some defatted peanut flour into the melted coconut oil. Omit the peanut butter and use just coconut oil, defatted peanut flour, sweetener, and berries for a skinny snack!

Is this recipe carefully calculated to fit into THM’s numbers? What happens if I want a second portion?
All the ingredients in this are THM:S ingredients, so there isn’t really a serving size as long as you don’t exceed 1 cup of strawberries (if you would be using blueberries, you should exceed 1/2 c. in an S setting). However, this recipe already has a tablespoon each of coconut oil and peanut butter which are fairly calorie-dense, so it’s not a dessert I would recommend eating double helpings of. 🙂
Rats! I’m in the middle of the second helping (made with defatted peanut flour instead of real pb). I’ve been using fresh strawberries and it tastes great. However, it strikes me that this would make an excellent THM ice cream inclusion. I’m not a huge fan of either moose tracks or strawberry ice cream, but eating this makes me want to throw in some vanilla ice cream too. I don’t eat too many S meals, less than half of meals and snacks, so maybe I’ll get a special dispensation on this one. 🙂 This recipe is so good, I’ll have to hide it from my husband! I added a sprinkle of salt and dash of vanilla to round out the flavor.
Hey – don’t worry about it! It sounds like you have a good balance of fuel types, so especially if you use defatted peanut flour instead of the peanut butter, you’ll probably be OK. I’d be more concerned about someone who makes a steady diet of S meals (as some of us tend to do…ahem…me). Love the ice cream idea! I’ve been thinking along those same lines myself, just haven’t gotten around to it yet.
Hi, I was just reading your posts about Deep S today, and I was wondering if using the peanut flour instead of peanut butter would make this a Deep S, since your peanut butter topping is a deep S? This recipe is WAY, WAY, WAY better with fresh strawbs, BTW, and I also add a dash of salt and vanilla to round out the flavor.
Hi Elizabeth! I’m afraid berries are not allowed in Deep S, so no.
I love this snack, I actually didn’t use the peanut butter and I used blueberries instead of strawberries. Is this ok?
Yep! Perfectly fine! I’ve done that before too.

I doubted you for a bit just looking at this recipe. Peanut butter and strawberries together? It just sounded WEIRD! I decided to be brave today and try it though. Oh dear me…..I think I shall start having to haul in peanut butter by the pails! This is SO good and SO easy to throw together! Never shall I doubt you again! I love the combo and I love how the frozeness of the strawberries takes me awhile to eat it. It reminds me so much of the chocolate covered frozen fruit I bought from a streetside cafe when I spent 6 weeks in Guatemala. Thanks again for an amazing recipe!

Wonderful. Just wonderful. Thank you for this recipe! I added a little protein powder as the mixture was cooling down and didn’t find it affected taste or texture at all.
I am wondering if you use bakers chocolate melted, add a little cream if it would still work. I have never been a fan of dark chocolate. I miss milk chocolate.
Never tried it, but I’m guessing that would be fine. 🙂 Not as easy on the metabolism as the coconut oil, though.
I was thinking that I would sub the bakers chocolate for the cocoa and add a little cream…the rest of the recipe would stay the same. I love the idea of hard shell chocolate. ?
Oh, I see. You’d be making a rich dessert richer by the addition of more fats in the form of baker’s chocolate and cream, but for a once-in-awhile treat, that’s fine. 🙂
I can’t believe I read this while on vacation in a rural area….won’t be able to give this a try for 10 days! It sounds delicious. You are so creative. I am peanut-allergic so will be making it with almond butter (I so wish there was such a thing as defatted almond flour!).

My problem wih using coconut oil is the amount of saturated fat. I usually only use Ultra Virgin Olive oil. Being diabetic and a surviving 2 open heart surgeries I am very careful.
Saturated fat is good for you! May I suggest that you read a book called “The Big Fat Surprise”? (Here’s my review here: https://www.briana-thomas.com/book-review-the-big-fat-surprise-nina-teicholz/) The book details how the low-fat conspiracy came about. Really, it was mostly just politics. Diets high in fats, especially saturated fat, are proven to be healthier than those low in fats. 🙂
