What happens when your mom gets sausage patties out of the freezer for supper but you don’t want to just make sausage patties and scrambled eggs? You make a quiche and use the sausage patties as the base! Add some unique veggies for a filler (since we Trim Healthy Mamas don’t use bread crumbs or potatoes), garnish with colorful peppers, and call it a meal. My mom absolutely loved it! (The rest of the family didn’t think it was too bad, either.)
If you don’t want to use sausage patties, a layer of cooked crumbled sausage would work too.

- 12 uncooked pork sausage patties
- -
- 3 c. finely-chopped fresh broccoli*
- 1 med. onion, chopped
- 6 eggs
- 1 c. shredded cheddar cheese
- ⅓ c. unsweetened almond milk
- ½ tsp. each dill weed, garlic powder, paprika, salt
- -
- 1 c. shredded mozzarella cheese
- 3 small colorful peppers, sliced horizontally (for garnish)
- Place the sausage patties in the bottom of a greased 9"x13" pan (they should cover the bottom of the pan). Mix the second set of ingredients together with a hand mixer, then pour the mixture over the sausage. Top the casserole with the mozzarella cheese and sliced peppers and bake (uncovered) at 350* for 45 minutes or until solid in the middle.
If you don't want to use sausage patties, just use a layer of cooked crumbled sausage. You could even just mix this right in with the egg mixture.

Can you tell me what I did wrong? Mine was still really wet even after 1 hour. I followed the directions but instead of hand chopping the onion & broccoli, I lightly pulsed in my food processor. I used cooked (thawed) sausage crumbles. Everything else was done exactly as you stated. Thank you!
I’m sorry – I don’t know! Maybe the vegetables leaked out more liquid if they were shopped more finely, but it shouldn’t make *that* much difference. I’m sorry it didn’t turn out for you!
Are the sausage patties the brown and serve type or or they fresh sausage? If they are fresh do you cook the, first? I am a little confused.
They are uncooked sausage patties and I do not cook them before using them in the casserole. They’ll bake in the oven. 🙂
This is in the oven now. I’M super excited to try it. However i just read the comments, and i didn’t thaw the sausage. How much longer and I supposed to cook it? and will it make this mushy?
I’m afraid I’m not sure since I’ve never tried it with frozen sausage patties. Check it at 45 minutes and see if the sausage is cooked through. If it’s not, just continue baking and checking until it is. 🙂

Does the sausage need to be thawed?
Yes, otherwise you’ll need to adjust the baking time.
What sausage do you use? All the sausage I find is loaded in corn syrup.
I’m not sure, Natalie. I just use what my mom gets – from Aldi or Sam’s Club, I’m not sure which. She gets a big box, then splits it up into several meals’ worth and freezes it, so we don’t have any of the boxes with brand name on them right now for me to check. Sugar is listed in the ingredients, but there’s only 1 carb per serving so you’re good. 🙂 (The condiments principle applies here.)
