How’s your week going so far? Mine has been busy, but good. My cookbook designer and I have been working hard to get the interior of the book completely finished (have I ever told you guys that I’m a perfectionist with OCD?), and the covers are currently in production. I can’t wait to see the whole thing all put together!

The weather is just lovely here in upstate South Carolina. We’re 5 hours from the coast so we didn’t feel the affect of Hurricane Matthew very strongly (although we did get some much-needed rain). The temperatures have cooled off so nicely, and we’ve been enjoying soup frequently. There’s nothing my mom loves more than having soup leftovers for lunches throughout the week!
If you’re new here, these “What’s on My Plate?” posts are meant to give you inspiration and show you just how easy healthy eating can be! They are not professionally-styled photo shoots, nor do they necessarily catalogue everything I ate in a week’s time. These posts aren’t meant to be guides for serving size or anything like that. I don’t always have everything on my plate at the beginning of the meal when I get my camera out (and I don’t always get my camera out, period). Please just use these posts as inspiration for what to eat, not how much to eat.

Breakfast:
(E) Cottage cheese, banana slices, Uncle Sam’s cereal, and THM Super Sweet Blend
(E) Cinnamon oatmeal
(E) Chocolate oatmeal with banana slices
(Deep S) Eggs fried in coconut oil + Oolong tea
(E) Chocolate oatmeal with banana slices and a splash of skim milk
(E) Homemade Bread toast + cottage cheese with Pumpkin Butter
Supper:
(E) My mom’s chicken barley soup (Similar to this recipe, but hers is better. I haven’t been totally able to recreate it yet.)
(S) Pizza made on Joseph’s lavash bread
(E) Taco Soup (recipe in my cookbook)
(S) Poor Man’s Steak + sautéed cabbage + salad
The Poor Man’s Steak was leftovers from Sunday lunch when we had company. This version is the traditional version with canned mushroom soup gravy (I scraped off as much as possible), but I have a healthy version in my cookbook.
(S) Parmesan Chicken Tenders + cauliflower with cheese + salad
Lunch:
(E) Leftover rice and beans + apple slices + colorful peppers
(S) Spaghetti squash with cheese and sauce from an oriental sticky chicken recipe I’m working on + peanut butter okra shake
(S) Leftover Joseph’s lavash pizza + sautéed cabbage with nutritional yeast + cucumbers
(E) Leftover Taco Soup + apple slices
(S) Bacon sandwich
(E) Leftover chicken barley soup + Apple Oat Cake
Snacks/Dessert:
(FP) Everyone loved this Chocolate Dreamy (my healthy version of a Wendy’s Frosty!) that I posted on Monday!
(S) Instant PB&C-Covered Strawberries
(S) My mom experimented with a skillet chocolate chip cookie recipe. I’m going to work on it some more. (With Basic Ice Cream)
(S) Joseph’s lavash strips fried in coconut oil and seasoned with THM Super Sweet Blend and cinnamon (don’t worry – I shared)
(S) Instant Chocolate-Covered Blueberries (based off of this recipe, but no peanut butter)
(S) Basic Ice Cream with peanut butter and a Skinny Chocolate Drizzle

Hi, Briana! I’ve been doing THM (not very consistently) for a few months now, and your posts are very encouraging. (I’ve actually gone back and read all your old posts, which is how I came up with this question.) 🙂 You’ve mentioned Uncle Sam’s cereal a couple of times now, and I was just wondering what it is and whether or not it’s THM approved. By the way, I’ve been enjoying trying your recipes. Thank you so much for sharing!

I’ve difantly been enjoying a lot more soups lately with eating out in our sukkah at night, soup just hits the spot since it gets kinda of chilly here at night, now during the day, that’s another story(: it’s still super hot during the day! Chag samech!

Thanks for sharing! I really enjoy your posts. Question for you, are you still happy with your refurb Vitamix? I’ll be in the market for a new blender soon – I have had the ninja for the bast few years and also get tired of ice chunks in my smoothies! I’ll be trying your new chocolate shake today! Lol…that’s because it is. 😛 We were out of natural. I actually prefer natural.
