I’m sure many of you have done this before, but in the spirit of stupidly-simple recipes…I give you a pizza pocket. Or a pita pizza. Or a pita pizza pocket.
4-ingredients, tastes like pizza, kid-friendly, easy, and made in the toaster. It’s one of my favorites. I might still be a kid.
Just be careful with the toaster, okay? You’ll want to be a little careful with the cheese and all because we don’t want to start a fire. I’ve never had that problem, but you never know what could happen…
You could always ditch the toaster idea and fry this baby in coconut oil for a crispy, naughty-tasting comfort food! I’ve done this when using hot pepper cheese inside and it’s phenomenal. The more coconut oil in your diet, the better, and who doesn’t love fried food?!
Trim Healthy Mamas (click here for my quick synopsis of the plan), I’m labeling this an S because I don’t like to skimp on cheese (and I use real pepperoni). However, if you use a small amount of low-fat mozzarella or a Lite Laughing Cow Cheese wedge and stick to turkey pepperoni, I think this would actually be a Fuel Pull.

- ½ a Joseph's Reduced Carb/Flax, Oat Bran & Whole Wheat Pita Bread
- Tomato paste
- Mozzarella cheese
- Pepperoni (regular or turkey)
- Spread tomato paste into half a Joseph's pita. Fill the pita with mozzarella cheese (slabs would probably be easier for this purpose than shredded) and pepperoni slices. Pop in a toaster and toast until the cheese is melted and the pita is toasty. Be careful not to tear holes in your pita or your toaster might get messy...or catch fire...or both. Just be careful and use common sense, please and thank you.
For a totally awesome variation on this, fry this pita pocket in lots of coconut oil for maximum comfort food! Hot pepper cheese is great inside this pita, btw.

I don’t know what to do with these mini pitas.. I have never eaten one. Do you frig them after opening.? Do you cook them or micro them ? They are too dry and tasteless right out of the pkg.
Are you referring to the Joseph’s pitas without anything in them? They’re meant for use as a sandwich vehicle, to hold things, not necessarily to be eaten on their own. 🙂 That’s my understanding at least. I keep them in the fridge after opening. Sometimes I just stuff cold fillings in them. Other times I stuff them and then fry on both sides in a skillet with coconut oil to make them crispy.
Trying to come up with the best way to prepare these (precook) & be able to microwave them at work. Thinking about baking them. I’m open to ideas, Mamas!
Would a serving be 2 halves?

Hi Beth! I think the baking idea would be worth a try! If you’re using Joseph’s pitas, you could have two halves, you’re correct. 🙂
