I just thought I’d share with you a really awesome way to eat coconut oil: fry things in it. Specifically, bread items that will crisp up and melt in your mouth. Like this fritter:
Don’t let the name fool you. You can use whatever you have on hand. I happened to have a lot of mushrooms that were going bad, and someone had set celery out on the counter, so I used those.
I’ve come to love coconut oil. I really do believe it has contributed to my weight loss, as well as conditioned my skin.

- ½ Joseph's low-carb pita
- Fresh mushrooms
- Celery
- Garlic-herb seasoning
- Prepared horseradish
- Mozzarella cheese
- Turkey bacon
- 2 T refined coconut oil for frying, divided
- Fry the vegetables (enough to fill up your half pita), garlic-herb seasoning, and horseradish in 1 T coconut oil until cooked to your liking.
- Stuff the pita with the vegetables, cheese, and bacon. Fry the pita in the other tablespoon of coconut oil until crispy. Pour the excess coconut oil from frying over your pita and enjoy!

I have a question. Is this meant as a meal or a snack. It sounds delicious but I am unsure it would hold me over for a meal. I am guessing too much for a snack bit thought I would ask.
I would use it as a meal, but definitely add some veggies and maybe a piece of dessert on the side to fill you up. 🙂
