Another Fuel Pull waffle? You betcha! This yummy mocha waffle slides in on the lighter side with no significant sources of carbs or fats, making it a Fuel Pull recipe for Trim Healthy Mamas. Joining the Fuel Pull waffle ranks with Mr. PB&J Protein and Ms. Strawberry Shortcake, Mocha is a great way to eat a filling, healthy breakfast while switching up your calorie load and making your body delve into its own fat stores for energy.
Check out the recipe below for topping options. You can stay in Fuel Pull mode with a small amount of reduced-fat cream cheese and some sugar-free syrup, or you can go all out with the cream cheese and add some sugar-free chocolate chips for a THM:S version reminiscent of a mocha chip muffin. (Speaking of which, that’s going to have to join the stack of recipe ideas. Sounds like a promising muffin in a mug to me.) Add some sliced banana and low-fat cottage cheese on top for a THM:E breakfast.
Since I’m not much of a coffee drinker, you may want to add some extra instant coffee for a stronger flavor. Your choice. I also tend to err on the not-so-sweet side, so some extra sweetener like some THM Super Sweet Blend or THM Gentle Sweet may be a welcome addition for you.

- 2½ T. Briana's Baking Mix*
- 2½ tsp. instant coffee granules (or more, to taste)
- 2 tsp. cocoa powder
- ½ tsp. baking powder
- ⅛ tsp. xanthan gum
- 1/16 tsp. salt
- 1/16 tsp. (2 doonks) THM Pure Stevia Extract Powder (or more, to taste)

- 2 T. low-fat Greek yogurt
- 2 T. water
- Fuel Pull: low-fat cottage cheese, 1 T. reduced-fat cream cheese, sugar-free syrup, sugar-free chocolate syrup
- S: cream cheese, Lily's chocolate chips, 85% dark chocolate (and any of the Fuel Pull options)
- E: sliced banana (and any of the Fuel Pull options)
- Whisk the dry ingredients, then add the wet ingredients and whisk again. Taste and add more coffee and sweetener if desired. Bake in a well-greased waffle iron (it will take a little longer than a normal waffle), top with your choice of toppings, and enjoy!

Is this a one waffle and your done meal? Or can you have more than one and still stay in FP territory?
If you used fat free Greek yogurt you could probably get away with 2, but I’m always full with 1!
Could you use Oat flour as a substitute for the baking blend? It would just make the entire recipe an E meal correct?
You’re welcome to try that but you may need to use more oat flour than the baking mix called for since oat flour doesn’t soak up as much liquid. 🙂 It would be an E.
Any suggestions when it is a well greased waffle iron and it doesn’t come out? Half sticks to the top and the other half sticks to the bottom?
Also I notice you say that it will take longer than a normal waffle? How long is this? I do not think the timer on my waffle maker works correctly.
I don’t know a specific time, but just bake it until the exterior is nice and firm. 🙂
Hi Kendra! The only thing I can think of is to make sure you’re not using soap to wash the waffle iron. I just wipe mine out with a paper towel when I’m done using it so I don’t break down the “seasoning” on the surface (similar to how you would take care of cast iron skillets).
I have a box on the way from Netrition that has some cool things in it, like oat fiber, defatted peanut flour, glucomannan… I can absolutely not wait! I don’t know what I’ll make first, but waffles are definitely coming up! I got a waffle maker and Necessary Food for my birthday from a couple friends 🙂 I’ve been trying to do THM with NSI but it will be some easier with a few simple things here n there.
So, I’ve been doing THM, but I’m on the less strict side… my husband is doing well to support me on this, but he would rather have me enjoy life with him- sharing a few cheats every so often, so weight loss has been s..l..o..w… but I believe it will happen yet. Every time I eat zucchini instead of pasta has gotta be helping! ?
I do have a question: is it just my imagination or did u say somewhere that the MIMs can be baked in a waffle iron? I don’t have a microwave. Maybe you have a link for directions on how to waffleize or bake ’em?

Hi Rachel! Yes, most mug muffins can be baked in a waffle iron! I just bake the batter as I typically would any waffle – no special science to it.
