Warning: I am a brownie addict.
I’ve tried many “brownie-in-a-bowl” types of recipes in search for the perfect quick, easy, single-serve brownie. I couldn’t find any that pleased me, so I made my own. This brownie is not cake-like; it’s nice and soft thanks to the pumpkin. It’s not eggy, it’s not super calorie-laden, and it’s chocolate. Therefore, it is blissful.
I updated this recipe as of Sept. 4th, 2015 (first published Oct. 17, 2014) using my new Baking Mix and THM Gentle Sweet. This is the perfect combination. I’ve included the old flour measurements in the Notes section of the recipe, but I highly recommend the Baking Mix. It definitely improves the brownie-like gooey texture.

It’s soft, gooey, and warm…everything a brownie should be.

- 2 T plain canned pumpkin puree
- 2 T egg whites (carton variety works great)
- 1 T butter, softened (coconut oil would probably work as well)
- 1 T water
- Pinch salt
- 1 T cocoa powder
- 1 T Briana's Baking Mix*
- ¼ tsp. baking powder
- 2½ - 3 tsp. THM Gentle Sweet
- Stir all ingredients together and microwave in a ceramic dish for 1½ minutes or until mostly set in the middle but still wet on top. Let sit for a few minutes to solidify. Yields one brownie.
You could always bake this at 350 degrees F until it's mostly baked. Take it out when it's still a little gooey in the middle and let it sit for a few minutes to set up.

I don’t usually calculate nutrition info on my recipes since the healthy eating lifestyle I follow doesn’t require it (Trim Healthy Mama), but MyFitnessPal is a super easy way to find nutrition facts! If you sign up for an account, under the Recipes tab there’s a place where you can just add the link to a recipe and it will pull up the ingredients for you to confirm, then generate the nutritional info! 🙂
This is the first recipe I am making from your cookbook. I prefer to use an oven over a microwave. Anyone have the app time to bake at 350 in an oven?
I’m afraid I don’t have an exact time for you since I’ve only made this in the microwave, but as I noted at the bottom of the recipe here on the blog (I can’t remember if this note is in the book or not), “You could always bake this at 350 degrees F until it’s mostly baked. Take it out when it’s still a little gooey in the middle and let it sit for a few minutes to set up.” 🙂
This was so delicious. This is the second morning having this for breakfast. I wanted to up my protein this time so after mixing up the brownie mixture (using THM baking blend ratio 1:1) and poked in 1 Tbsp sugar free organic peanut butter into the center and covered it slightly with the brownie mixture. Nuked it for the 1 1/2 minutes. Cooled slightly. Topped with 2 Tbsp plain Greek Yogurt mixed with 1/2 tsp Gentle sweet. I’m in my happy place. Briana I love your recipes. Thank you again.
I’m dairy-free right now in an effort to help my nursing son’s ear infections, so I’m excited to find brownie recipes I can use or adapt for that. I made this one this evening with coconut oil, and the golden flax/ oat fiber combination and it turned out wonderfully! I also used Pyure brand stevia blend since that’s what I had on hand. Thanks!
Okay to use 1 whole egg instead of the egg whites? Since it’s an S…. ? Does that change the texture?
Yes, I found that a whole egg made it too eggy.

I just made this and I say WOW! I have been experimenting with Mile High Keto Biscuit Mix – Low Carb & Sugar Free by Fuffy Chix Cook as I have some on my counter made up and decided to use her mix for the flour mix. I love this mix because it is so low carb. Google it if your interested. That is the only change I made except I used Ideal which is a mix of xylitol and splenda in place of truvia. So yummy and hit the chocolate craving spot.
Who would have thought to use pumpkin. So fun!

love this!!! first time i made it i used 1T flax flour and 1/2T oat fiber. this tasted the closest to a brownie out of all the THM recipes i tried. second time i did 1/2T flax, 1/2T oat flour, 1/2T vanilla whey powder and loved it even more. i like my regular brownines slightly undercooked and cold/gooey from the fridge. well….i couldn’t wait long enough to cool them however the warm brownie did taste very much like a real warm brownie. this is going to be one i write down and keep posted to the fridge lol

Oh. My. Goodness. Doubled the second version you posted (the microwave one with slightly less cocoa powder & topped with a few walnut pieces) and at 1-1/2 minutes cook time, the center was still all gooey–which is exactly as it should be, IMO. Wow. Hello chocolate-lava-brownie-cake in a bowl. My son and I split it and enjoyed it very much–totally guilt-free. Thank you!
This is one of my favorite desserts!! It’s great alone, but tonight I am having it with a raspberry cream cheese frosting and a few fresh raspberries on top. Delicious! Thanks for the great recipes.

I know Oat fiber and Oat Flour aren’t the same but would it work to use Flax Meal and Oat Flour in this recipe?
I had actually calculated it out before, and even if you used all oat flour instead of the flax/oat fiber like I did, you’re just over 6 carbs which would still be acceptable in an THM S setting. So yes, I wouldn’t see a problem in replacing the oat fiber with oat flour.

Definitely a dark chocolate kind of gal! I love milk chocolate, but it isn’t as satisfying as dark chocolate. I have to admit, I do love white chocolate even if it isn’t really chocolate! 😛
I’m a dark chocolate lover. I did’t have any pumpkin on hand so I substituted unsweetened applesauce. A little Swerve sprinkled on the top was a nice touch. I microwaved mine too and it was scrumptious!! Hard to overeat a single serving recipe 😉
