When Trim Healthy Mama released a recipe for “Trim Holiday Cookies” in the latest THM e-zine, I got a hankering for sugar cookies. Without the sugar, of course. Here’s a quick and easy sugar cookie for one (since I didn’t feel like making a full batch) that is full of holiday flavors and will fulfill your sugar cookie craving in a healthy way. I like to eat mine dunked in unsweetened almond milk. Mmmm….Merry Christmas, everyone!
This is yet another oat fiber recipe. In fact, unlike usual, I used exclusively oat fiber in this recipe. I love the texture of this sugar cookie and find it to be very authentic, but if you can detect a grittiness that you don’t like (as sometimes happens when using oat fiber on its own), try substituting another low-carb flour for part of the oat fiber (you may need to add more of a different flour because oat fiber soaks up a lot of liquid). *Update 9/19/15* I’ve also tested this recipe with 2 T of my Baking Mix and it works great!

- 1 T butter, softened/melted
- 1 T sour cream
- 1 T water
- 1 T egg white
- Dash salt
- Dash of vanilla extract
- Dash of almond extract
- 2 doonks THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.)
- 2 T oat fiber (use gluten free if necessary) *or* 2 T Briana's Baking Mix
- ¼ tsp. baking powder
- Cinnamon for topping
- Mix all ingredients (except cinnamon) together. Spoon onto a parchment-lined pan (a well-greased pan might work, but your cookie will probably spread out more) and smooth the top. Sprinkle with cinnamon. Bake at 350 degrees F for approximately 10-12 minutes (oat fiber), 8-9 minutes (Baking Mix) or until a toothpick comes out clean and the top is no longer sticky. For best results, let the cookie cool for five minutes before digging in. Dunk in unsweetened almond milk, if desired. Enjoy!

Do you mean just bake the ingredients together in a mug in the microwave? Never tried it, but I’d love to hear how it turns out if you do!

I seriously love this recipe! I subbed 1 tablespoon full fat coco milk for sour cream… and it’s divine! I do have to bake mine slightly longer… about 15 minutes but wow this is amazing! Thank youuuuuu!!
Oh my this was so good. It is on my favorite list. It does need to cool for a bit before trying to eat it. I also found to get it to a cookie like texture it should be spread out somewhat. I had it with a cold glass of almond milk and it was delicious. Thanks for sharing?

I don’t have oat fiber. What do I use instead?
You could try any low carb flour (keep in mind that oat fiber is a fairly dry flour, so adjust amounts accordingly), but it won’t be the same texture.
What would the measurements be if I wanted to make a big batch for the family? Thanks!
I’ve never tried to multiply this recipe so I’m not sure if the ratios would remain the same or not. Feel free to give it a try, though! This recipe makes a very large cookie, so maybe you could multiply everything by 5 and make about a dozen regular-sized cookies. See how they turn out that way, then increase the recipe by as many times as you like. 🙂
I love the flavour of this cookie! Unfortunately it came out more like cake than a cookie. I baked it for 14 minutes and it was spread thin. What might I be doing wrong?

Make sure you’re using the flours I have listed (and not over-baking), and baking on parchment paper gives the best results, thickness-wise. 🙂

I made this tonight and mine was very fluffy and crumbling. I don’t know what I did wrong 🙁 good flavor!
I was really excited about this recipe but mine turned out kind of soggy and weird. Any ideas? Should I have baked longer? Perhaps my oat fiber was more hydrated than yours? I imagine its moisture content can vary with room humidity.
If it’s soggy, yes, I would try baking longer next time or adding a little more oat fiber. There are a lot of variables involved, so the best advice I can give you is just to play around with it.
the taste is good but mine were very flat. I only used the oat flour (which I made by grinding rolled oats). Should I have let is sit longer prior to baking? Used more flour? TIA.
The recipe calls for oat *fiber* which is very different from oat flour. Oat fiber has zero net carbs whereas oat flour is a carb source (using it in this recipe would be heading in crossover direction for Trim Healthy Mamas). Oat fiber also absorbs much more liquid than oat flour does. If substituting another flour that doesn’t absorb so much liquid, you’ll have to use more flour.

How much sweet blend would I need as I don’t have the stevia? Or would a substitution not work?

Plain Greek yogurt could, yes.
