Remember my Chocolate Dreamy recipe – the okra shake that tastes like a Wendy’s Frosty? (It has converted many okra scoffers into okra lovers, or at least okra toleraters.) This is the strawberry version, and you can enjoy it as soft serve or a shake! It’s super creamy. I’m not going to say that you won’t be able to detect okra because I can personally taste okra every single time I use it in any recipe, but I will say that the faint okra flavor is definitely not a bad thing in this recipe. It just adds a bit of a green, earthy taste that pairs nicely with the strawberry.
This recipe makes a huge bowl of soft serve (or a huge jar of strawberry shake). My little sister saw my big bowl of ice cream – which was literally my lunch one day – and asked, “You’re eating ALL of that?” It may make a big bowl of ice cream, but my other sister – the runner – was very impressed with the macros. I didn’t run numbers, but there’s nothing calorie-dense in this recipe. It includes protein and okra for a great health boost, though, and it kept me full all afternoon! You know me – I put peanut butter on everything, and strawberry soft serve is no exception. PB&J at its finest! You could add defatted peanut flour to stay in THM:FP mode, but a little natural peanut butter turns this strawberry soft serve into a delicious THM:S meal, snack, or dessert.

- 1 c. frozen diced okra*
- 1 c. frozen strawberries
- 1 c. unsweetened almond milk
- ¾ c. crushed ice
- ⅓ c. low-fat cottage cheese
- 2 T. whey protein powder**
- 2 T. half-and-half
- ¼ tsp. baking powder (for flavor)
- 3/32 tsp. (3 doonks) THM Pure Stevia Extract Powder
- Dash vanilla extract
- ¼ tsp. glucomannan
- Blend all the ingredients in a high-powered blender until a smooth soft-serve consistency is reached. If in doubt, blend a little longer; the shake will taste better. (I used a Vitamix with a tamper and found that high speeds help this blend. If you find that your blender won't blend the mixture, thin it down into a shake with some more almond milk.) Enjoy!
- This recipe makes a huge serving of soft-serve ice cream or a quart jar of strawberry shake. I enjoy the whole thing for lunch, but you can try cutting the recipe in half if you don't want so much.
**I don't typically like the taste of whey protein powder, but in this amount in this shake I don't mind it and it helps make the shake creamy and fluffy. You can try substituting collagen, but the shake probably won't be quite as creamy.
Feel free to add some defatted peanut flour to this shake for a PB&J option! You can add natural peanut butter, but that will turn this into a THM:S recipe.

So Delicious. And it made a bunch. I’m going to put some in the freezer and see what happens. This is definitely like a dessert you eat with a spoon. I omitted the baking powder and added a splash of banana extract. I’m guessing you could flavor that’s a lot of different ways with extracts.

I don’t keep half and half on hand. Could I substitute cream for the half and half and have it still be FP? Could I maybe use 1T of cream and 1T of almond milk to keep it FP? Thank you.
No, you couldn’t use all cream because that would add about 10 grams of fat. Using 1 T cream and 1 T almond milk would work. 🙂

This is so good! Of course, I’m going to be the person who comments on a recipe without making it as written. I needed an E today, so I substituted 2/3 cup of frozen mango chunks for the strawberries and cardamom for the vanilla. The mango goes well with the earthiness of the okra, and cardamom has a bit of an earthy flavor, too. If I use this combo again, I might sub Greek yogurt for cottage cheese. The tang of yogurt goes nicely with mango. I will also make this as written once I have frozen strawberries.

Hey! Thank you for what your doing! Ok.my question.i haven’t been using okra bc I have diverculosus…You can’t eat seeds and such…Any suggestions around this issue? Also I can’t use any truvia/stevia.do you recommend any other sweetner? I will achieve my success…Thank you….
Hi Cynthia! Since okra is such an important part of this recipe, I would suggest just using a recipe that doesn’t include it (there are plenty of options out there!). That’s probably easier than trying to substitute for the bulk and texture that the okra adds. As far as sweetener goes, monk fruit extract might be worth checking into.

If you process the okra in a food processor or blender, I’m pretty sure the seeds will just get blended/chopped up with the rest of the okra. Cynthia, when you say “stevia,” are you referring to actual stevia extract or to stevia blends like the TruVia you mention? TruVia, or Pyure or THM’s Super Sweet blend, is mostly erythritol, which can cause intestinal issues so I can see why someone with diverticulitis would avoid it, but pure stevia extract isn’t similar, it’s not a sugar alcohol. If I’ve understood right, pure stevia might be great for you.
