I’ve gotten into thinner smoothies instead of thick milkshakes lately – I find them more refreshing during the summertime. This peach smoothie reminds me of the smoothies my mom used to make our family for evening snacks as a treat once in awhile during the summer. She combined different fruits depending on what we had on hand, but peach was always the star. One of her smoothie concoctions actually made it into the Light & Tasty magazine (or was it Quick Cooking?) back in the day. I come by the recipe creation gene honestly!
This smoothie only takes a few simple ingredients. Since it contains 1/2 c. cottage cheese for creaminess, I didn’t even add any extra protein powder or collagen, but you definitely could if you want a great protein boost. Those of you who are turning up your nose at the idea of cottage cheese in a smoothie – stop it. Unless you have a really nasty brand of cottage cheese, you won’t taste it when it’s blended up with ice, almond milk, and a cover-up flavor such as peach! What you will taste is a nice smooth creaminess without a bunch of calories. Now hear me out: I recently found out that not all cottage cheese brands are created equal. We usually buy big tubs of cottage cheese from Sam’s Club because we go through it so fast and like to save money, but when I was in Ohio working for my grandparents recently I bought a store brand cottage cheese from a local store (Walnut Creek Cheese, for you locals) that was nigh unto gross. I ate it, of course, but I can definitely imagine that putting that salty stuff in a shake would be a major turn-off. I wouldn’t know, since I didn’t have a blender in Ohio. (Can I just say that it’s great to be back cooking in my own kitchen again?)
While I was in Ohio, my mom actually found a working Nutribullet at a thrift store really cheap! I’ve been loving it for quick shakes and smoothies. It has a single-serve cup (well, that’s all ours has, to be honest) which is something that my dearly-beloved Vitamix doesn’t sport. The Nutribullet really does a great job of blending ice up very fine.

- 1 large peach, chunked (I didn't peel mine)
- 1 c. crushed ice
- 1 c. unsweetened almond milk
- ½ c. low-fat cottage cheese
- 1/16 tsp. (2 doonks) THM Pure Stevia Extract Powder
- Dash vanilla extract
- ¼ tsp. glucomannan
- Blend the ingredients together until smooth and enjoy! (I used our Nutribullet.) Feel free to top the smoothie with a squirt of fat-free Reddi-wip if you like.
Feel free to add some whey protein or collagen for additional protein. The cottage cheese adds about 10g protein on its own.

Yum! It made so much that I put half of it aside to make ice cream out of. I did add Monkfruit to mine as it wasn’t sweet enough but that still didn’t give me the sweet peach flavor I was craving so I added brown sugar Swerve and OH MY! It was perfect! I also added a scoop of whey protein powder and cut back the milk because I wanted it thicker. I will definitely make this again!

This was good however it made a Huge batch.. I ended up saving a small jar and freezing it…also my peaches were not very ripe so not too peachy I added Xanthum gum instead of glucomanen and also collagen protein.

I love this recipe and have been freezing fresh sliced peaches in ziplock bags to use just for this recipe. I just tried this with pears today and it was amazing! Now I’m gonna freeze pear slices just for this as well!

I just made this for an afternoon meal. I didn’t have cottage cheese, so I used Greek yogurt instead (and I can definitely taste the sourness you refer to in another comment…to help hide that, I added a little more stevia). In spite of the sourness from the yogurt, it’s still delicious! Thanks for a yummy and EASY recipe!

I just made this for my dinner tonight! First time to voluntarily eat cottage cheese…and I liked it all blended up in this smoothie! I did add a half scoop each of protein powder and collagen (to make it more of a filling meal) and I also used a scant 3/4 tsp pyure in place of the stevia. So yummy and refreshing…and feels indulgent – almost like a chick-fil-a peach shake!

This was sooo good! I have found that one cup of fruit is about the same as one peach, so for breakfast I used a cup of frozen cherries! Very tasy!

I have been using cottage cheese for a long time because I do like the creaminess. As you say, peach is my favorite. Well, to be honest lemon comes in as a close second. I make a lemon custard old fashion ice cream. I have really gotten into the addition of multi-collagen because it really helps my insides. I use a store bought cottage cheese as well as yogurt in my smoothies. As I have said before in posts, I am not egg free nor dairy free, however I am an insulin dependent diabetic. Everyday is a challenge for me. Briana, I so appreciate your words of wisdom. **The young woman can teach an old woman, too.**
