I consume a lot of eggs, and a lot of my recipes contain eggs, but I realize that some of you a) have egg allergies or b) hate anything with an even slightly eggy texture. Plus, eggs are expensive right now. My solution? An eggless muffin/cake in a mug. It reminds me of a coffee cake. Or French toast. Or a cream cheese Danish. Cream cheese Danishes are very good things to be reminded of.
This cake has a really unique texture because it has no structure from an egg. It’s really moist, and the flavor is great. I like to leave mine a little on the underdone side – and I can, because there’s no raw egg to worry about (not that raw egg has ever been an issue for me, but for some people…).
This can be used as breakfast, snack, dessert, you name it. If you’re eating it on its own as a meal, add some protein (Greek yogurt, cottage cheese, bacon, etc., etc.).

- 2 T golden flaxmeal
- 2 T coconut flour
- ½ tsp. baking powder
- Dash of salt
- 3 doonks THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.; you may wish to add more sweetener if you don't plan on eating this with sweetened syrup on top)
- ½ tsp. cinnamon
- 1 T olive oil
- Rounded T sour cream or Greek yogurt
- 4 T water
- 1-2 T cream cheese
- Sugar free maple-flavored syrup (use an allergy-friendly version or make your own if necessary)
- Whisk the dry ingredients together with a fork in a mug or small ceramic dish. Add the olive oil, sour cream, and water and whisk again. Make a well in the middle for the cream cheese and add it. Microwave for 1:45 - 2 minutes or until the top is dry and the middle is done as much as you like (there's no raw egg to worry about). I like mine underdone. Top with sugar free syrup and feel free to smash it all together if you like. If eating this on its own for breakfast or a snack, add some protein. Yields one serving.

Hi,
I tried this today and added a tablespoon of collagen and a splash of apple cider vinegar. It rose well and while moist, it didn’t crumble at all. I have been looking for egg free recipes and glad I finally found a good one. I can see using this as a base for other cakes and muffins. Thanks!

Yes, this is an S (you can find fuel type info below the picture in the printable recipe), but I recommend adding protein to it for a full meal. 🙂

This may be a very dumb question, but are you supposed to mix in the cream cheese, or sort of let it make in the center like a filing?

I would love to have this with a Trimmmy with Collagen in it. Would a scoop of collagen be enough protein to make it a complete meal?

I haven’t used the collagen so I’m not sure how much protein is in it. As long as it’s over 10 grams, I would consider that enough for me personally.

I dont know what happened. I followed the recipe but it did NOT turn out good. It did not set up and even after 5 minutes in the microwave it was mushy. Normally my oven just need about two minutes

It’s definitely supposed to be moist, but I wouldn’t characterize it as mushy. I’m sorry it didn’t turn out for you.

Mine never set up either, mushy as well…cooked it about 4 minutes. I wonder what we did wrong?? eating now but texture is not good but I hate to waste ingredients…maybe too much cream cheese? I only used one tbsp though. hmmm

Mine turned out mushy and weird as well the first time I made it. What worked for me was substituting 1 T melted coconut oil for the 1 T olive oil; this way it was fully cooked and had a nice texture after the minimum cooking time of 1:45. Not sure why this worked, but it turned out great so I’m happy. 🙂

Can you substitute almond flour for the coconut flour in your recipes?

No, coconut flour soaks up a lot more liquid than almond flour. However, if you’re willing to mess around with amounts, go for it.

I also added 1/4 c of walnuts which I think helped mask the flax well, plus I love the texture! It made it taste like a real coffee cake.

Very light and fluffy! I mistakenly added 2 rounded T of Greek yogurt so I fully cooked it about 2 min on High and it turned out great!
