The perfect combination of ice, collagen, xanthan gum, and enough blending in a good blender give you a thick, luxurious, marshmallowy texture. Add some chocolate chunks and the right hint of peppermint and Scrooge is your uncle (the reformed version, that is).
If you have children you should probably go ahead and make a double batch because everyone is going to be begging for some. Ask me how I know. Your husband might even ask for seconds.

Which peppermint oil should I use?
I’m not a big fan of having to order through multilevel companies, so I just use NOW brand, which I buy off of Amazon: peppermint essential oil. I’ve always been happy with it! A little goes a LONG way, so start with 1-2 drops. 2 was good for me, 3 was a tad much. Some of you might be happy with only 1.
You can also do your best with peppermint extract. I feel like the peppermint oil tastes more “real,” but you do you. I have personally never had good luck with peppermint extract not tasting like toothpaste. It’s strong stuff, but not nearly as strong as the essential oil. Start with a dash, and you might end up using 1/8 or 1/4 teaspoon, depending how much you like the menthol cooling sensation of peppermint.
TIP: instead of removing the foil seal from your bottle of extract, just poke a hole in it with the tip of a knife so it’s easier to get a little out at a time.

Peppermint Milkshake

Ingredients
- 2 cups (260g) ice cubes
- 3/4 cup unsweetened almond milk
- 1/4 cup half and half
- 2 tablespoons heavy cream
- 3 tablespoons collagen
- 1 1/2 tablespoons THM Super Sweet Blend
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1–2 drops peppermint essential oil (it’s super strong!)*
- Red food coloring as desired to make it pink (optional)
- 2–3 tablespoons sugar free chocolate chips
Instructions
Blend everything except for the chocolate chips in a high powdered blender until smooth. Taste and add more sweetener or peppermint flavor as desired.
After things melt a bit, do another good long blend on a high speed to get the milkshake to a thick and fluffy texture.
Add the chocolate chips and blend on lower speed for a bit to break up the chunks enough to fit through a straw. Enjoy!

Feel free to mix and match the liquids (almond milk, half and half, and cream) to make this peppermint milkshake as creamy or as low calorie as you like. This was the sweet spot I found between creaminess and calorie overload.

I finally ordered some peppermint candies! I can’t wait to try them in the Frappa (which is great BTW, even with just chocolate bits).
I ordered some lollipops too. I’m going to put a few in my purse so that when I’m out with my kids and the inevitable “do you want a lollipop/piece of candy?” comes up I can give them safer choice of candy. Seriously there are so many times when candy comes into play in a kids life. Haircut = candy. Dr. = candy. Church = candy. Bank = candy. And we wonder why diabetes is increasing so rapidly. Arg!

From an old New Englander, who spent her teens working in an ice cream store a “Frappe” has ice cream a milk shake does not. Now Starbucks has put a twist on the term Frappe as they make the E an A and it’s Frappe(A). Lol.

I had your PB fudge earlier today 😉 For this mint delicousness, I also used collagen and 3 droppersful Trader Joes liquid stevia which I think is not at all bitter – all of the Stevia powders even THM brand are bitter to me. I did not use the super sweet — just the liquid stevia and its fabulous! Thank you — I am asking for your cookbook for Christmas and I have told my homeschool mom friends about it too! Finally, more horse pics when you can! (I am a veterinarian on Saturday; home with the kiddos the rest of the time and I love seeing your pics!)

I just made this frappe. I used collagen instead of gelatin and added more sweetener. I had a few sips but my one year old and 5 year old claimed the rest and are having difficulty sharing. ??. Score!!!
