Hello everyone! The last few weeks have been busy ones in the kitchen! Since I need to cook anyway, why not test new recipes, eh? (My Canadian husband must be rubbing off on me….) As always, some recipes were winners while others still need some tweaks. Thankfully they were all edible…and thankfully my husband isn’t super picky! You’ll be seeing some of these recipes on the blog eventually, but the bulk of them will be exclusives in my next cookbook. I’m not settling on a release date until I have more of the grunt work done (since I found out last time that the publishing process usually takes longer than one initially envisions!), but I do get plenty of chances to cook and am having fun concocting new stuff!
Even though many of these recipes aren’t published anywhere yet, I hope they can still give you some ideas for the types of things that you can cook up in your own kitchens, and I’ll include links to similar recipes where I can.
Keep in mind that these posts don’t show nearly everything I ate in a week’s time and shouldn’t necessarily be used as a “this is how much you should eat in a meal” rule. This is what works for me, but everyone’s body is different and the amounts of food that are right for me may not be right for you. Listen to your body and adjust accordingly. These WOMP posts are meant to give inspiration, not guidelines.

BREAKFAST
(THM S) These sour cream/chive/biscuity mini quiches have made a great on-the-go breakfast for Ryan. They still need some tweaks, though. Too wet.

As a side note, when I published the above picture to my Facebook page, I got a lot of comments along the lines of, “Oh, what a strange combination! You must be pregnant!”
UN) If you think that strange flavor combinations automatically equal pregnancy, you obviously haven’t been following my blog for very long…? I have a history of that…. 😛 (Strange combos, not pregnancy.) DEUX) I personally find it in rather poor taste to be either speculating publicly or making a joke about someone else’s possible pregnancy. I know a lot of dear women who struggle with infertility and either speculation or joking could easily strike a tender chord. Please refrain from doing this on my website and social media accounts. 😉
LUNCH
(THM S) Creamy Eggs & Spinach – lunch for two on Ryan’s day off! (#nextcookbook)
(THM E) Leftover Greek Chicken (Quinoa) Bake with lettuce, ketchup, and mustard – shall we call it a deconstructed Greek cheeseburger? (#nextcookbook)
(THM S) Classic Egg Salad (#nextcookbook) over lettuce + hot pepper cheese chunks + celery and peanut butter + a sliver of a lemon dessert I’m working on
You could also try: Low Carb Egg Salad
(THM E) Leftover black beans over Cilantro Lime Rice with lettuce, sriracha, and salsa (#nextcookbook!)
You could also try: Easy Mixed Rice & Beans
(THM S) Leftover glazed pork chop (still needs tweaked) + lettuce with Caesar dressing
(THM S) Leftover greens and sausage (needs tweaked) with lettuce + celery and peanut butter with a few sugar-free chocolate chips
SNACKS & DESSERTS
(THM S) The remnants of a Cream Cheese Chocolate Chip Muffin that I made for Ryan and me to share…
(THM S) Working on a lemon version of this Cream Cheese Chocolate Chip Brownie Cake…still needs tweaked.
(THM E) Banana Bread Baked Oatmeal (#nextcookbook) made great breakfasts and snacks throughout the week.
You could also try: Ginger Peach Oatmeal Cake
(THM E) Sliced kiwi and strawberries with homemade yogurt makes a great snack or dessert!
(THM E) We got some kefir at a discount grocery store so I’ve been experimenting with various kefir recipes! This Strawberry Kefir Ice Cream still needs a tweak, but it should be hitting the blog sometime soon!
You could also try: Classic Strawberry Ice Cream
(THM E) Mango Strawberry Kefir Smoothie – This was amazing. Ryan was glad it made enough for two people. 😛
SUPPER
(THM S) Classic Egg Salad (#nextcookbook) on sliced tomatoes…
…or on a low-carb wrap, if you prefer.

Classic Cucumber Raita (#nextcookbook) made a great side dish. Pairing it with egg salad didn’t make a whole lot of sense considering that raita is used as a palate-cleanser after hot Indian curries, but when recipe testing….

(THM S) Roast Beef Dinner (#nextcookbook) – Ryan loves roast beef and I recently found some on clearance at Kroger. Yumminess!

I tried your baked blueberry oatmeal for the first time this past weekend. We had it on Resurrection Sunday. This year we had a number of different responsibilities at church, so I had to give up my traditional Easter morning big breakfast spread. Your oatmeal fit the bill–easy to eat on the go. We all loved it! And the leftovers were super yum! Thank you for all you do. I told my two oldest girls the story of your courtship & marriage. It was very encouraging for them. I love your first cookbook! Every recipe I’ve tried has been a hit. You keep it interesting and change it up with your breakfast ideas which is awesome because it’s so easy to get into a breakfast food rut! I recently have been using some of your cookie recipes and not baking them and just freezing the dough in small balls. I too am not afraid of raw egg. Your cookie recipes are great baked or not! Congratulations on your new marriage! I also hope others will respect your privacy but I do appreciate how open you are sharing what you eat in a random day so keep that up!
