I am a soup fanatic, especially during the winter months. When I need to throw something together quickly for supper, put something in the crockpot while I’m gone for the afternoon, or need to clean out the fridge, I make soup! Corn isn’t recommended for weight loss, but you could have a moderate amount once in awhile in an E setting without doing too much damage. 🙂 I don’t know of any recipes off the top of my head, but I would use pureed steamed cauliflower and cottage cheese (with some almond milk and chicken broth as liquid) for a thick, creamy base. Not all that familiar with corn chowder recipes, so I’ll leave the rest to you. 😉

I just made the bean soup – well I took the idea and made it mine… beans, salsa, garlic and cilantro, and just a dab of sour cream. My one year old loves it! Says mmmmmm! after every spoonful! (Here I thought it’d be all mine:)

You know, “Soup” is basically a love language….right up there with “Quality Time” and “Physical Touch.” I made your Mom’s Chicken Soup for my family this past week, and dang, it was like a warm, cozy, nostalgic, hug in a bowl. My brother just doesn’t get it, though….”SOUP? Again? Just STOP with the SOUP, okay??” Nope. Can’t stop. Won’t stop.
