Hey, folks! It feels like there are a lot of pictures in today’s post! Now that I have a smartphone, I’ve been doing a better job of remembering to take pictures of my food. It’s much handier to take phone pictures than lugging my DSLR to the dinner table. Of course the picture quality isn’t as good, but that’s a trade-off I’m willing to make for the sake of convenience for these posts. You’ll notice that there are quite a few breakfasts missing. That’s because I was testing some recipes, forgot to take pictures with my phone, and haven’t edited the “fancy camera pictures” yet. You’ll get to see ’em soon enough on the blog. 😉
I’ve been doing quite a bit of recipe testing this past week so I have plenty of recipes to schedule ahead for while I’m in Africa (Feb. 9-28, so don’t be surprised if I don’t reply to emails or approve comments during that time). I think you’re going to enjoy some of this past week’s experiments! Unfortunately, with experiments come flops, and this week was no exception. I wanted to create a Deep S cake. “Why not make it dairy free?” I thought. Great idea! “Why not add okra for added healthy benefits?” I thought. That idea should never have left the drawing board….
Actually, it was a great idea but failed in execution. The cake tasted very earthy. To add insult to injury, the experimental dairy-free Deep S frosting was about the texture of rubber. Doctored up with some peanut butter and whipped cream, the concoction was edible – but not one of my best. What really hit hard was the fact that the cake was absolutely picture perfect. Who can resist a gorgeous chocolate cake? After taking one bite, my mom stated, “That was a disappointment.” Hahaha….
If you’re new here, these “What’s on My Plate?” posts are meant to give you inspiration and show you just how easy healthy eating can be! They are not professionally-styled photo shoots, nor do they necessarily catalogue everything I ate in a week’s time. These posts aren’t meant to be guides for serving size or anything like that. I don’t always have everything on my plate at the beginning of the meal when I get my phone out to take a picture (and sometimes I forget to take a picture, period). Please just use these posts as inspiration for what to eat, not how much to eat.

(E) Chocolate Oatmeal (with not as much banana as it appears…the bowl is deceptively small)
This is my classic chocolate oatmeal breakfast, and I thought I should actually measure for once so I can share it with you. Recipe coming soon.
(E) This is some of my failed E granola that I was working on last week. There’s some cottage cheese under there too. Topped with blueberry sauce experiments.

This could’ve been a lovely E, but my mom used a fatty marinade. Even though there are a few FP marinade recipes in my cookbook. Oh well, I didn’t have to cook, so I’m not complaining.
