I love serving cheesecake delights like this Rhubarb Cheesecake Delight at picnics or potlucks because they taste “normal.” 🙂 I’ve found that desserts that rely on large quantities of baking mix, like cakes or cookies, take more getting used to for people who aren’t accustomed to alternative baking.
The most delicious low carb graham cracker crust
I was so pleased with how the crust on this delight turned out! Cheesecake delights usually have a graham cracker crust, and blanched almond flour mimics that better than any other low carb flour I’ve used.
How to choose and prepare rhubarb
Thin stems of rhubarb are best. Split large stems down the center before chopping, and discard any woody stems.
I like to chop the rhubarb to about one quarter to one half inch. Frozen rhubarb should work if you don’t have fresh rhubarb. Thaw and drain before measuring and proceeding with the recipe.
Adding chunks of rhubarb, strawberries, or raspberries to the jam
The rhubarb in the jam will disintegrate if it gets completely soft, which is fine, but if you want some rhubarb chunks pull the mixture off the heat when the rhubarb is still al dente OR add some extra chopped rhubarb when the original rhubarb is soft and jam-like and cook for just a few minutes to take the crunch off.
Another option: add some sliced fresh strawberries or fresh raspberries after cooking if you want to bring some colorful fresh berries to the party!
