Peanut butter cream pie, but easier
Yes, I do have a peanut butter cream pie recipe (which I am actually going to tweak a bit in future, probably using the same pudding and crumbs that I used in this recipe). The perk to this Peanut Butter Pie Delight is that you don’t have to mess with a pie crust. Simply press the THREE INGREDIENT crust mixture into the bottom of a pan and bake for a few minutes.
And did somebody mention plenty of delicious vanilla pudding and peanut buttery crumbs? Those crumbs are definitely the best part. Refer to my husband’s comment quoted above.
Other ways to use these delightful peanut butter crumbs
If you’d just want to make a batch of these crumbs, I definitely wouldn’t blame you. They’re awesome as an oatmeal topping if you don’t mind a crossover. (I do a lot of peanut butter on oatmeal these days since I’m nursing.) They’d also be terrific on ice cream or in a peanut butter pie yogurt parfait. Actually, a yogurt parfait would be the perfect lower calorie option if you don’t want a whole pan of this delight sitting around. Sugar free vanilla Greek yogurt + a squirt of Reddi wip + these peanut butter crumbs would be amazing!
Perfect to make ahead for social functions!
If this sounds like a lot to do all at once, you can make the crust, pudding, and crumbs in advance as you have time, then make the whipped cream right before assembly. I actually prefer this Peanut Butter Pie Delight after it’s been assembled and refrigerated overnight, so if you want to make it the day ahead for an event, feel free to do that. It’s the perfect social function dessert because it doesn’t rely on a lot of alternative flours, which can take some getting used to.
