I don’t know about you, but I love seeing what other people are eating. Call me nosy. 😛 In case you’re the same way and enjoy getting real life easy food ideas that fit the THM lifestyle, here’s a random assortment of pictures of some of the things I’ve been eating lately. I’d love to hear about your latest food obsessions and experiments in the comments!
Due to the current state of affairs with the virus and trying to limit my grocery shopping PLUS getting ready to move and trying to clean out the pantry and freezer, I’ve been eating some odd combinations of things – and more Crossovers (combined carbs and fats in the same meal) than usual. Crossovers are still healthy, just not as conducive to weight loss.
New Recipes
As you’ll see referenced below, I’ve actually done a lot of recipe testing in the last few months and have lots of new recipes stored up to share with you, but with everything we’ve had going on they haven’t made it to the blog yet. Frankly, I’m not sure when they will considering that we’re moving in less than 2 weeks and I’m expecting a busy summer settling in up in Ohio. It’ll happen when it happens, and if you want to be sure to see the new stuff when it rolls out, sign up for my email newsletter. The email newsletter isn’t exactly a regular occurrence right now either, but hopefully this fall I can pick things up a little more regularly again.
As you can see from the title, I’ve been working on this post for quite awhile. I was planning to get it published back in May, but…moving. (In case you missed that announcement, you can read it here.)
Breakfast
What else but Easy Chocolate Oatmeal? 😉 I literally have this for breakfast every morning. It’s a THM E, and on this occasion I topped it with some homemade Greek yogurt sweetened with stevia and some frozen mango chunks. I must’ve been out of bananas.
Lunch/Supper
Note: some of these pictures are of full meals, but others are of just side dishes. Don’t forget your protein!
Asparagus Fries make a delicious side dish! THM S
Roasted sweet potato cubes. THM E
Salad on repeat: mixed greens, feta cheese, Spiced Pecans, and Strawberry Vinaigrette. THM S
Some kind of salad with soft boiled eggs, cheese, tomato, and…salsa? Can’t remember. 😛 THM S
Roast Beef Melts on low carb tortillas. My husband and I love these. You can find a recipe in Convenient Food. THM S
Some kind of quinoa veggie hash with spices and leftovers from the fridge, topped with ketchup. It was unique, and yummy, and a great way to use up what I had on hand. THM E – or maybe a XO because I think I may have put some leftover roast beef in it for extra protein.
Experimental “Louisiana Grub” concoction (coming to the blog soon) with green peas, fresh tomato, baby carrots, and some homemade hummus (recipe I’m working on for the blog). Probably a THM E provided that I had a small enough serving of hummus to stay out of XO territory.
Scrambled eggs with ham, with fresh cabbage topped with Caesar dressing on the side. I LOVE fresh cabbage salads. So crunchy! THM S
Burrito filling (ground beef, refried beans, spices) with onion, tomato, shredded cheese, and dill pickles on a low carb tortilla. THM XO
Hamburger with cheese, tomatoes, onions, and dill pickles + sauteed mushrooms + collard greens. THM S
Cumin Brown Rice – recipe coming eventually. THM E
The Best Black Beans – recipe coming eventually. THM E
Black beans, scrambled eggs, sour cream, and salsa on low carb tortilla. THM XO
My husband loves what he calls “black bean paste” – basically black beans cooked with all kinds of yummy stuff and then pureed to a refried bean consistency. He loves them in breakfast wraps like this!
A bowl with the same rice and black beans topped with just a drizzle of sour cream and some fresh tomato. THM E
Some kind of Instant Pot concoction with lentils or dried chickpeas, sweet potatoes, smoked turkey sausage (fairly low in fat), and who knows what else. THM E
More Louisiana Grub with a side of sauteed kale and canned red beets. THM E
Egg muffin recipe I was working on. I tried it several times trying to get the texture right and eventually got tired of scrubbing muffin tins so I scrapped that idea and turned it into a quiche/breakfast bake instead and just cut it into squares. 😛 Coming to the blog soon. THM S

Scrambled eggs with cheese + spinach + some kind of leftover meat. THM S

Some kind of lentil concoction + steamed broccoli + kale salad. THM XO (the kale salad had olive oil in the dressing)
Said kale salad, which was probably a THM XO due to combining fats from olive oil and carbs from canned red beets and shredded carrots.
Sundried tomato salmon bake with nonstarchy veggies (coming to the blog eventually). THM S
Some kind of all beef hot dogs (no clue as to the brand) + roasted asparagus. THM S
Vegetable Beef Soup. THM S
Snacks/Desserts
Mango kefir shake. Probably didn’t go by a recipe, but you can look off of this Strawberry Kefir Shake recipe for inspiration. THM E
Homemade sourdough cinnamon raisin bread (recipe coming to the blog eventually) with Strawberry Freezer Jam. THM E
Some kind of horrific looking kefir shake with spinach in it + Blender Banana Muffins from Convenient Food. Would usually be a THM E but I used whole eggs in the muffins instead of egg whites. Add some sugar free chocolate chips and chopped walnuts and top with butter for an amazing Crossover!
Another mango kefir shake. THM E
Homemade Greek yogurt sweetened with stevia and flavored with vanilla + frozen blackberries + Sweet Blend. THM FP
Simple dessert for Ryan and me one night. Homemade Greek yogurt with chunks of frozen mango. Amazing. THM E
Carrot cake recipe I was working on. I made it 4 or 5 times and it looked amazing but I just couldn’t get it quite right. Eventually I got tired of eating flopped carrot cakes and have shelved the experimentation for now. Perhaps I shall revisit it later. Perhaps not.
A pumpkin casserole recipe coming to the blog eventually. Like sweet potato casserole but with pumpkin instead.
Homemade granola recipe that will be coming to the blog eventually. I’m VERY excited about this stuff and LOVE it. It’s a Crossover and I was making it with my husband in mind for a grab-and-go breakfast (since I’m not so great at getting up super early and making him something before he leaves for work). It’s easy to make and uses simple ingredients.

Stuff I Bought Recently
I took advantage of a recent THM sale and stocked up on my favorite sweeteners: THM Pure Stevia Extract Powder and THM Super Sweet Blend. I also got a bag of Integral Collagen to stir into my Easy Chocolate Oatmeal in the mornings.
I just tried the Trim Healthy Chocolate Brownie Fix Bar for the first time! I wasn’t really sure what to expect, but I was pleasantly surprised. It tastes like a chocolate protein bar, go figure. It’s super chewy and lasts awhile, and it’s not overly sweet. In fact, I’d venture to say it’s probably not sweet enough for a lot of people because it was perfect for me. 😛
These bars are great at room temperature and cold from the fridge, but they’re rock hard out of the freezer. Warming the bars in the microwave for a few seconds makes them very brownie like and easier to chew. They do have a lot of “staying power” and kept me full for a long time! All in all, I’d recommend them!
This is my favorite brand of defatted peanut flour, which I buy on Amazon.
This big bucket of Nutiva coconut oil from Amazon tastes great and lasts me a long time. I got some back when we first got married 2+ years ago and just now reordered. I prefer refined coconut oil because it doesn’t taste like coconut and is therefore more versatile in recipes than the extra virgin variety.

Looks good. Excited for you to share that bean paste recipe. I love the idea of scrambled egg and bean burritos. I also just want to add that I’ve really been enjoying your PBJ themed recipes.
